When it’s summer, I’m all about eating as much fresh produce as possible. The fruit. The veggies. The tomatoes. Oh, the tomatoes. I usually max out on them by fall but by January my body is craving in-season delicious tomatoes. Ahhh…summer.
I also tend to eat a lot better in the summer. It’s probably easier because everything is in season and tastes about 1000% better. It’s also hot and I want to eat lighter meals that fill me up. My go to lunch and sometimes go to dinner as well is a salad. And, if I don’t plan then I end up with the same old salad day after day. So, it got me thinking: why don’t I have a list of salads I can reach for every week? That’s when I got the idea for the 15 Best Healthy Summer Salads.
