This cucumber peach salad is like summer in a bowl. It’s sweet, juicy, a little spicy, and totally refreshing. The hot honey vinaigrette brings the sass, and the basil and mint keep things cool!

This is a salad that sends both the kids and adults at the table back for seconds. It’s refreshing, crunchy, sweet summer goodness. 🥒🍑

This cucumber peach salad is my ultimate summer refresher! The juicy peaches, crisp cucumbers, and a pop of sharp red onion get tossed in a sweet-spicy hot honey vinaigrette that’s full of flavor. Add in fresh basil and mint, and every bite tastes like sunshine with a little kick. It’s the kind of salad I make when I want something easy, light, and absolutely bursting with freshness—plus, it looks gorgeous on the table.

Variations to try

While I love this salad exactly as written, I also switch things up from time to time. Here are a few swaps and additions I’ve enjoyed:

  • Tomatoes: Chunks of fresh, summer tomatoes taste wonderful with the peaches.
  • Avocado: The creamy element is a great addition.
  • Goat cheese or feta: Both are lovely!
  • Chopped pistachios: A little sprinkle of crunch goes a long ways.

Make-ahead tips

This is a great recipe to make for a summer party, so you might want to get a jump start on it. The dressing can be made up to a week in advance and kept in your fridge. It will harden when cold, so let it come to room temperature and give it a good whisk before using it.

For the salad, you can chop the peaches, cucumbers, and red onion many hours before serving and keep them in your salad bowl in your fridge. I recommend adding the basil and mint fresh, as they can discolor slightly after being chopped. When you’re ready to serve the salad, simply toss it with the dressing and enjoy!

I made this cucumber peach salad on a hot summer day, and the mix of juicy peaches, crisp cucumbers, fresh basil and mint totally won me over. Tossed with a sweet-spicy hot honey vinaigrette, it’s pure sunshine in a bowl!

Ingredients

Hot Honey Vinaigrette

  • 1 tablespoon honey (see notes)
  • 1 tablespoon lemon juice
  • 1 teaspoon dijon mustard
  • 1 teaspoon Sriracha
  • 2 tablespoons olive oil
  • ¼ teaspoon EACH: salt and pepper

Cucumber Peach Salad

  • 3 mini cucumbers (sliced)
  • 2 medium peaches (chopped)
  • ¼ cup thinly sliced red onion
  • 2 tablespoons fresh mint leaves (chopped)
  • 2 tablespoons fresh basil leaves (chopped)

Instructions 

  • Make the dressing: Start by whisking the honey, lemon juice, Dijon, and sriracha in a small bowl. Whisk in the olive oil and then season to taste with salt and pepper.

  • Assemble salad: Add the cucumbers, peaches, red onion, mint, and basil to a salad bowl.

  • Toss and serve: Pour the dressing over the top, toss gently, then serve right away.

Honey: If you have hot honey in your pantry, use that and omit the sriracha.
