Dinners to Eat in July

July is summer at full tilt. The garden is overflowing, the evenings are long and slow, and dinner wants to be fresh, fast, and barely any fuss. These are my 10 favorite dinners to eat in July, a mix of cool, crisp salads, easy grilled mains, and a few that are just right for feeding a crowd.

July is when the produce does most of the work for you. Tomatoes are sweet and sun-warmed, corn is at its peak, and peaches are dripping ripe, so dinner can stay simple and still taste incredible. This list leans right into that, with bright, fresh flavors that come together fast and keep you out of a hot kitchen.

There’s a real mix of textures and temperatures going on. Cool, creamy burrata against warm cherry tomatoes in the fresh summer spaghetti, crisp grilled peaches with peppery arugula, and a chilled bowl of gazpacho for the nights when the oven feels like too much. When the grill is calling, the gochujang pork chops with watermelon salad and the smoky grilled corn salad more than earn their spot.

The best part is how easygoing these July dinners are. Most come together in 30 minutes or less, several can be made ahead for a picnic or a potluck, and nearly all of them taste even better eaten outside with something cold in hand.
