Dinners to Eat in August

August is summer at its most generous. The garden and the farmers market are overflowing, the grill is still going strong, and dinner can lean almost entirely on how good everything tastes right now. These are my 10 favorite dinners to eat in August, from fresh garden mains to a few quick weeknight wins for the back-to-school stretch.

August is the month when the produce takes over, in the best way. Zucchini is everywhere, eggplant and peppers are at their peak, and tomatoes are sweet enough to eat like fruit, so dinner practically plans itself. It’s that lovely in-between stretch, too, when we’re holding onto long summer evenings while the first hints of back-to-school start creeping in.

This is where all that garden abundance gets to shine. The grilled vegetable salad piles charred peppers, eggplant, and zucchini over peppery arugula with warm, crunchy croutons, while the zucchini patties turn a pile of squash into something crisp on the outside and tender on the inside. There’s cozy, cheesy comfort in the vegetarian eggplant parmesan, sweet against salty in the summer quinoa salad with cherries and feta, and plenty of smoke off the grill from the juicy pork chops and the flaky, fresh fish tacos.

The best part is how easygoing these dinners are when the days are still full. So many come together in about 30 minutes, several can be made ahead for a picnic or a potluck, and the pineapple fried rice is exactly the kind of fast, flavorful dinner you want once the school-night routine kicks back in.
