I’ve made this whipped Boursin dip with marinated tomatoes and crispy garlic more times than I can count, and it’s always the first thing to disappear at the table. There’s something about the creamy, herby cheese base paired with juicy, sweet tomatoes and golden garlic that makes it completely irresistible.
The trick is in the layers—fluffy whipped Boursin, tangy marinated tomatoes, crunchy garlic chips, and that final drizzle of olive oil. It looks fancy, but it’s super easy to throw together and packs so much flavor in every bite.
And don’t even think about skipping the grilled sourdough! It’s the perfect vehicle for scooping, and that toasty, smoky flavor takes this appetizer totally over the top.


Make ahead tips
If you’re having friends over, it’s always nice to get some of the messy work out of the way before they arrive. You can easily make all three components ahead of time and then assemble right before serving.
Tomatoes: These can marinate for 2-3 hours.
Crispy garlic: Make this up to a day ahead and keep it on your counter. Or keep it in your fridge for up to 10 days.
Whipped Boursin: You can whip this a few days ahead and keep it in a covered container in your fridge.
I think this appy tastes best at room temperature, so make sure to take everything out of the fridge at least 30 minutes before assembling the platter.
How to store leftovers
In the highly unlikely event that you have leftovers, scoop them into a container, cover it, and keep them in your fridge. Eat them within 2 days.

Whipped Boursin Dip with Marinated Tomatoes and Crispy Garlic
Ingredients
Marinated Tomatoes and Cucumbers
- 3 cups halved cherry tomatoes
- 2 mini cucumbers (chopped small)
- ¼ cup fresh basil (minced)
- 1 clove garlic (finely grated)
- 1 tablespoon fresh thyme leaves
- 1 tablespoon olive oil
- 2 teaspoons EACH: sherry vinegar and lemon juice
- ½ teaspoon EACH: salt, pepper, and sugar
Crispy Garlic Topping
Whipped Boursin
- 2 packages Herb and Garlic Boursin Cheese
- ½ cup yogurt
- Grilled bread (to serve)
Instructions
- Marinated tomatoes: Add all of the ingredients to a large bowl and mix well. Set the bowl aside on your counter for 1 hour – see notes.3 cups halved cherry tomatoes, 2 mini cucumbers, 1 clove garlic, 1 tablespoon olive oil, 2 teaspoons EACH: sherry vinegar and lemon juice, ¼ cup fresh basil, 1 tablespoon fresh thyme leaves, ½ teaspoon EACH: salt, pepper, and sugar
- Crispy garlic topping: Heat the oil in a small frying pan over medium heat. Add the garlic, chili flakes, salt, and pepper, and fry for 1 minute. Remove the pan from the heat and let it cool slightly.4 cloves garlic, 1 pinch EACH: chili flakes, salt, and pepper, ¼ cup olive oil
- Whipped Boursin: Add the Boursin and yogurt to your food processor and blend until smooth and creamy.2 packages Herb and Garlic Boursin Cheese, ½ cup yogurt
- Assemble: Spread the whipped Boursin on a serving platter then top with the marinated tomatoes. Drizzle on the crispy garlic topping and serve with toasted or grilled bread on the side.Grilled bread
