Whipped Boursin Dip with Marinated Tomatoes and Crispy Garlic

This whipped boursin dip with marinated tomatoes, cucumbers, and crispy garlic is my go-to appetizer when I want something easy, delicious, and a little bit fancy. The creamy whipped Boursin makes the perfect base for juicy tomatoes, crunchy cucumbers, and fragrant basil tossed in a tangy marinade, all topped with golden, crispy olive oil garlic. It’s fresh, flavorful, and always a crowd-pleaser—especially with grilled sourdough for scooping!
Marinated tomatoes: Add all of the ingredients to a large bowl and mix well. Set the bowl aside on your counter for 1 hour.
3 cups halved cherry tomatoes, 2 mini cucumbers, 1 clove garlic, 1 tablespoon olive oil, 2 teaspoons EACH: sherry vinegar and lemon juice, ¼ cup fresh basil, 1 tablespoon fresh thyme leaves, ½ teaspoon EACH: salt, pepper, and sugar
Crispy garlic topping: Heat the oil in a small frying pan over medium heat. Add the garlic, chili flakes, salt, and pepper, and fry for 1 minute. Remove the pan from the heat and let it cool slightly.
4 cloves garlic, 1 pinch EACH: chili flakes, salt, and pepper, ¼ cup olive oil
Whipped Boursin: Add the Boursin and yogurt to your food processor and blend until smooth and creamy.
2 packages Herb and Garlic Boursin Cheese, ½ cup yogurt
Assemble: Spread the whipped Boursin on a serving platter then top with the marinated tomatoes. Drizzle on the crispy garlic topping and serve with toasted or grilled bread on the side.
