
Glazed Teriyaki Chicken Burgers with Caramelized Pineapples

These glazed teriyaki chicken burgers are a summer favorite around here; I can never resist that sweet-and-savory combo. The caramelized pineapples and generous slather of teriyaki mayo take them over the top, giving each bite a juicy, flavor-packed punch.

If you’re craving a burger that’s bursting with bold, tropical flavors, my glazed teriyaki chicken burgers are exactly what you need. The juicy chicken patties get a fresh hit of cilantro, while the sweet caramelized pineapples and lightly seared green onions add the perfect caramel crunch and smoky touch. Seriously, it’s like a mini flavor party in every bite.
Then, there’s the creamy teriyaki mayo and crisp coleslaw that bring a cool, tangy balance to all that sweet and savory goodness. These burgers are fun to make and even more fun to eat. You won’t want to go back to plain old burgers after trying these.


Make-ahead tips
The components of these burgers can be made ahead, so whether you’re serving guests or meal-prepping, you can get a jump start on dinner.
Teriyaki mayo: You can make this and keep it in a jar in your fridge for a long time.
Chicken patties: You can form these and keep them covered on a parchment paper-lined plate in your fridge for several hours.
Caramelized pineapples: You can make these a few hours in advance. When I prep these ahead, I keep them in the pan on my stovetop. After I cook the burgers, I move the pan onto the hot element and let the pineapples reheat for a moment before serving.

Glazed Teriyaki Chicken Burgers with Caramelized Pineapples
Ingredients
Teriyaki Mayo
- ¼ cup mayonnaise (preferably Kewpie)
- 2 tablespoons teriyaki sauce
Caramelized Pineapples
- 4 pineapple rings
- 1 tablespoon brown sugar
- 1 tablespoon butter
- 2 green onions (sliced)
Teriyaki Chicken Patties
- 1 lb ground chicken
- ½ cup panko
- ¼ cup minced cilantro
- 1 teaspoon EACH: salt and pepper
- ½ cup teriyaki sauce
- 1 tablespoon brown sugar
- 2 tablespoons avocado oil (or another neutral-flavored oil)
- 4 brioche buns (warmed)
- Coleslaw (see notes)
Instructions
- Teriyaki Mayo: In a small bowl, mix the mayo and teriyaki sauce and set aside in your fridge.¼ cup mayonnaise, 2 tablespoons teriyaki sauce
- Pineapple Rings: Lay the pineapple rings on a cutting board and sprinkle both sides with the sugar. Melt the butter in a small frying over medium-high heat. Add the pineapple rings and sear for 2 minutes. Flip them over, add the green onions, and sear for 2 minutes more, until the sugar on the pineapple is caramelized.4 pineapple rings, 1 tablespoon brown sugar, 1 tablespoon butter, 2 green onions
- Teriyaki Chicken Patties: In a medium bowl, gently mix the ground chicken, panko, cilantro, salt, and pepper and then form into four patties.1 lb ground chicken, ½ cup panko, ¼ cup minced cilantro, 1 teaspoon EACH: salt and pepper
- Make Glaze: In a small bowl, mix the teriyaki sauce and brown sugar.½ cup teriyaki sauce, 1 tablespoon brown sugar
- Cook Burgers: Heat the oil in a large frying pan over medium heat. Add the burger patties and cook for 5 minutes, until golden on the bottom. Flip them over, baste with half of the glaze, and cook for 2 minutes. Flip them over again and baste with the remaining glaze.2 tablespoons avocado oil
- Assemble: Spread the teriyaki mayo on the buns and then top with coleslaw, a burger patty, and a pineapple slice.4 brioche buns, Coleslaw
