Zesty, bright, and earthy best describe this cumin lime vinaigrette. It’s the perfect drizzle over any salad or grilled vegetables, and it makes for a great marinade, too! It’ll come together in 5 minutes with just a bowl and a whisk!

If I’m looking in the fridge and thinking dinner could use a little extra spark, this cumin lime vinaigrette is exactly what I reach for. It’s bright, zippy, and full of bold flavor, instantly bringing life to whatever you drizzle it on.

I simply whisk everything together in a bowl, and it’s ready in minutes. Fresh lime juice gives it that sharp citrus punch, apple cider vinegar adds balance, and a spoonful of honey smooths everything out. Ground cumin brings warm, earthy depth, while Dijon mustard adds a little tang and helps the dressing come together. A pinch of sea salt enhances all those flavors, and avocado oil keeps the vinaigrette silky and light.

It’s the kind of dressing that turns a simple salad into something crave-worthy and makes grilled chicken, fish, or roasted vegetables feel intentional and exciting. I always keep this one in my back pocket for nights when I want dinner to feel anything but ordinary.

Additions and substitutions

One of the best parts of making your own vinaigrette is that you can adjust everything to your liking! Here are some ideas for additions and/or substitutions:

  • Lemon: if you don’t have limes on hand, you can try lemon cumin vinaigrette! The acidity from the lemon juice will bring a crisp, citrus bite to the vinaigrette, much like limes will.
  • Garlic: garlic fans will want to add that distinct sharp taste from garlic to this dressing, you can use finely minced fresh garlic or garlic powder.
  • Heat: if you want to turn up the heat a little bit you can try adding jalapeño or crushed chili pepper flakes.

Ideas for using this vinaigrette

Here’s how I like to use this cumin lime vinaigrette, since it plays so well with bold, fresh flavors—especially South American and Mexican-inspired dishes:

  • Mexican-inspired bowls and salads: I love using it to build a rice bowl or taco-style salad with tomatoes, black beans, grilled corn, and spicy Mexican rice. The vinaigrette ties everything together beautifully.
  • Vegetables: It’s fantastic drizzled over grilled or roasted vegetables. I especially like using it on a grilled vegetable salad where the cumin and lime really wake everything up.
  • Marinade: This vinaigrette doubles as an easy marinade for meat, poultry, or fish. The lime juice and vinegar help tenderize the protein while adding loads of flavor.
  • Everyday salads: I often use it on a simple spring mix, or spoon it over heartier salads like a grilled corn salad with sausage. It’s an easy way to make a basic salad feel exciting.

It’s one of those versatile dressings I keep coming back to because it works in so many different ways without any extra effort.

Ingredients

  • ¼ cup lime juice (fresh is best!)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon ground cumin
  • 1 teaspoon dijon mustard
  • ¼ teaspoon sea salt
  • ¾ cup avocado oil

Instructions 

  • Add the lime juice, vinegar, honey, cumin, mustard, and salt to a bowl.
    ¼ cup lime juice, 1 tablespoon honey, 1 teaspoon ground cumin, 1 teaspoon dijon mustard, ¼ teaspoon sea salt, 2 tablespoons apple cider vinegar

  • Whisk in the oil so the dressing is creamy.

  • Store the dressing in a jar in your fridge for up to a month.
