This easy-to-make cucumber radish salad is light, crunchy, and refreshing. It’s cucumber, radish, and chives tossed in a creamy four-ingredient dressing. It’s the perfect side dish for spring and summer, and it’s ready in just 10 minutes!

Radishes don’t always get the spotlight, but this cucumber radish salad is a great way to let them shine. It’s crisp, creamy, and refreshing, and a welcome change from the usual green salad. The cool cucumbers balance the radishes beautifully, and the whole thing pairs effortlessly with just about any main dish.

I love how quick and low-effort this salad is, especially in the summer when turning on the stove feels like too much. Thinly sliced cucumbers and radishes get tossed with a simple creamy dressing made from sour cream, a little mayonnaise, lemon juice, and chives. It’s tangy, fresh, and perfectly balanced without feeling heavy.

For the best texture and flavor, I like to keep the cucumbers and radishes chilled until just before serving. This salad is best enjoyed right away, so if you’re prepping ahead, wait to toss everything with the dressing until you’re ready to eat. Simple ingredients, minimal effort, and a side dish that always disappears fast.

Variations to try

I’ve kept this radish cucumber salad recipe pretty simple, but there are many ways you can tweak it, so don’t be afraid to have fun. Here are a few favorite ideas:

  • I love the delicate flavor of chives, but other fresh herbs like fresh dill, cilantro, or parsley taste great, too.
  • Add some crumbled feta cheese for its tangy, cheesy flavor.
  • Toss in some chickpeas to make it more filling.
  • Mix in some thinly sliced red onion or minced garlic for a pungent kick.
  • Serve it on a bed of fresh peppery arugula.

What to serve with cucumber radish salad

This radish and cucumber salad is the perfect spring or summer side dish. It’s an easy salad to mix up for barbecues, mid-week dinners, or even special occasions like Easter when radishes are in season.

I love serving this cucumber radish salad with baked pork chops or grilled chicken breast. It also goes really well with our Thai chicken skewers!

Can I make this salad ahead of time?

Like most salads, this one is best enjoyed right away. You can certainly prepare the dressing and salad ingredients ahead of time but wait until you’re ready to serve it to add the dressing or it will get soggy.

How do I store leftover salad?

Store any salad leftovers in a covered container in the fridge for 1-2 days. It does go a bit soggy, but we’ve enjoyed the leftovers mixed into crisp salad greens.

Do I have to add the mayonnaise?

I think that the dressing is so much better with a little mayo. It makes it taste richer and gives it a better texture.

Ingredients

  • 6 mini cucumbers (sliced)
  • 2 bunches radishes (sliced)
  • ¼ cup minced chives
  • ¼ cup sour cream
  • 2 tablespoons mayonnaise (can be light)
  • 2 tablespoons lemon juice
  • ½ teaspoon EACH: salt and pepper

Instructions 

  • Add the cucumbers, radishes, and chives to a salad bowl.
    6 mini cucumbers, 2 bunches radishes, ¼ cup minced chives

  • In a small bowl, mix the sour cream, mayonnaise, lemon juice, salt, and pepper.
    ¼ cup sour cream, 2 tablespoons mayonnaise, 2 tablespoons lemon juice, ½ teaspoon EACH: salt and pepper

  • Pour the dressing over the salad and toss well. Serve right away.

This recipe served 6-8 people as a side dish. Feel free to cut the recipe in half if you’re serving fewer people.
