Cucumber radish salad ingredients
All you need to make this creamy cucumber radish salad is fresh veggies, some sour cream, and a few kitchen staples. Here's everything you need:
- Mini cucumbers – we like the crispness of mini cucumbers (aka Persian cucumbers), and they happen to be the same size as radishes when sliced. If you can't get your hands on some, you can use an English cucumber. Field cucumbers will work in a pinch, but make sure to peel them and remove the seeds.
- Radishes – since radishes are one of the first vegetables of the year, we start making this salad in the spring. Radishes range in flavor from mild to hot; you can use any variety.
- Chives – chives have a mild onion taste and add a delicate punch of flavor to this salad. You could substitute minced green onion.
- Sour cream – sour cream makes this salad extra creamy and gives it a nice tang. You can use full-fat Greek yogurt if you prefer.
- Mayonnaise – a bit of mayonnaise adds richness and creaminess to the dressing.
- Lemon juice – lemon juice adds a pop of bright citrus flavor and balances out the inherent creaminess of the dressing. You could also use a little apple cider vinegar if that's what you have on hand.
- Salt + black pepper – for seasoning, to taste.

- Mix in some thinly sliced red onion or minced garlic for a pungent kick.
- Serve it on a bed of fresh peppery arugula.

Recipe FAQs
Can I make this salad ahead of time?
Like most salads, this one is best enjoyed right away. You can certainly prepare the dressing and salad ingredients ahead of time but wait until you're ready to serve it to add the dressing or it will get soggy.
How do I store leftover salad?
Store any salad leftovers in an airtight container in the fridge for 1-2 days. It does go a bit soggy, but we've enjoyed the leftovers added to some crisp salad greens.
Can I swap the sour cream for yogurt?
Yes! A full-fat Greek yogurt has a thick texture and makes a wonderful alternative to sour cream. Using regular yogurt won't work because it won't be thick enough to coat the vegetables.
Do I have to add the mayonnaise?
We think that the dressing is so much better with a little mayo. It makes it taste richer and gives it a better texture. We found it tasted too much like sour cream on cucumbers without it.
What else can I make with cucumbers and radishes?
We love our sweet sauteed radishes and miso butter roasted radishes. Also, check out all of our many cucumber recipes for more inspiration!
