This honey butter skillet corn is creamy, sweet, and delicious. Make it with fresh or frozen corn and enjoy it year-round. It’s a quick and easy side dish the whole family will love, and it’s ready in just 15 minutes!

This honey butter skillet corn is one of my favorite ways to enjoy corn year-round. It reminds me of the creamed corn I grew up with, but this version feels a little more elevated and far less soupy, with a rich, comforting texture that’s hard to resist.

I cook the corn in butter, then stir in cream cheese, honey, a splash of hot sauce, and a pinch of salt and pepper until everything turns creamy and glossy. The corn stays tender with a bit of bite, and finishing it with minced chives adds a mild oniony note that brightens the whole dish.

I always serve this warm, especially in summer or early fall, alongside grilled or barbecued meats. It pairs beautifully with chicken, ribs, seafood, or other vegetable sides, and it all comes together in one pan. Quick, cozy, and crowd-pleasing, this is a recipe I make again and again.

Honey butter skillet corn variations

Enjoy this classic creamy corn skillet as-is or put your own spin on it with one of these variations:

  • Swap the honey for a different sweetener like agave or even maple syrup for a fall twist.
  • Sprinkle on grated parmesan cheese at the end for some bold, cheesy flavor.
  • Make it Mexican by adding chopped jalapeño to the corn, and swapping the chives for minced cilantro.

This honey butter skillet corn is creamy, sweet, and delicious. Make it with fresh or frozen corn and enjoy it year-round. It's a quick and easy side dish the whole family will love, and it's ready in just 15 minutes!

Ingredients

  • 2 tablespoon butter
  • 4 cups corn (see notes)
  • 2 tablespoons honey
  • 4 tablespoons cream cheese (can be light)
  • ½ teaspoon EACH: sea salt and pepper
  • 1 tablespoon hot sauce (optional – see notes)
  • 2 tablespoons minced chives (or green onions)

Instructions 

  • Melt the butter in a large frying pan over medium-high heat. Add the corn and cook, stirring a few times, until it's hot. If there is liquid in the bottom of your pan, let it mostly evaporate before moving on to the next step.

  • Add the honey and cream cheese and stir until the cream cheese has melted. Season with salt, pepper, and if using, hot sauce. Stir in the chives.

Notes

In the summer, try making this with fresh corn cut off the cob. For the rest of the year, this is a great recipe to use frozen corn or canned corn but make sure to thaw/drain the corn first. 
We like to use a mild hot sauce such as Frank’s in this recipe. But you can use something spicer for more kick if you’d like.
