This kale beet salad is perfect for fall when we start craving warm beets, but delicious year-round! Both kale and beets are nutrient powerhouses, and their flavors also balance each other out. The earthy and sweet notes of the beets meld with the slightly bitter, hearty kale. The maple candied walnuts add a perfect sweet crunch ā we just advise not trying to sneak a bite of one before adding to the salad as it's not possible to stop! Pro tip: make double to have them on hand.
Ingredients needed
Salads with an array of textures are so fun to eat! This kale and beet salad is no exception. These are the ingredients you need:
- Beets:Ā When roasted in olive oil, the beets have a sweet and earthy flavor with a tender yet firm bite.
- Walnut halves: Candied with maple syrup, contrast the textures and add a satisfying sweet crunch.
- Curly kale: Kale is the perfect base for this salad ā its hearty textures stands up to the rest of the salad. You can use a different kind of kale if that's what you have in your fridge.
- Sea salt and fresh cracked pepper:Ā To balance and enhance the flavors of the candied walnuts. The pepper works perfectly to balance their sweetness.
- Cheese: Goat or boursin cheese is our top pick. Feta cheese or a diced avocado is a creamy alternative.
- Honey balsamic vinaigrette: Apple cider vinegar, honey, balsamic vinegar, dijon mustard, garlic, sea salt, and extra virgin olive oil come together to make a creamy and perfectly balanced dressing.
How to make kale beet salad
How is this beet and kale salad with goat cheese delicious, pretty, AND breezy to throw together? Just roast the beets, candy the walnuts, make the dressing, and voila! This is how it's done:
- Beet: Roast the beets in the oven on a sheet pan until they're fork tender.
- Candy walnuts: Toast the walnut halves then candy them by pouring over maple syrup, then place them on parchment paper to cool down.
- Dressing: Combine all the dressing ingredients in a bowl leaving out the olive oil, then slowly whisk it in.
- Assemble: Add the kale, candied walnuts, cheese (or avocado), then the cooled roasted beets. Add the dressing and toss.
Honey balsamic dressing
Adding a bottle of store-bought salad dressing to your shopping cart might seem like a convenient shortcut, but achieving a delicious homemade dressing is a super easy and straightforward process. The key is gradual incorporation of oil ā you want to slowly whisk it in. If you add everything to a bowl and stir it around, you'll get an oily, runny dressing rather than a creamy consistency.
Put everything EXCEPT the oil into a bowl, giving it a little whisk. Then, slowly add the oil in a small and steady stream while whisking constantly ā the whole thing should take just one minute. If the oil starts to build up, stop pouring it in and whisk the dressing vigorously. If you're familiar with making homemade mayonnaise it's the same process, minus the egg yolk.
The salad dressing will last in the fridge for at least a week, which means you can always make a larger batch and use it for other salads.

How do I store leftovers?
Kale salads keep as leftovers better than most other green salads. The kale will wilt, but as it's a hearty green, it will retain some of its bite. If you have leftover beet and kale salad, it will keep in the fridge in a covered container for 3 days ā just know that the kale will soften.
Can I make the salad ahead of time?
While you don't want to dress the salad in advance, you can make the different parts of the salad. Store the different components in separate airtight containers ā keep everything except the walnuts in the fridge. The candied walnuts can stay at room temperature.
Can I prep the beets in advance?
Sure thing! If you need to save some minutes at service time you can roast the beets in advance and store in the fridge in an airtight container and warm up when it's time to assemble the salad. You can also purchase cooked beets, if needed, too.
I don't love goat cheese ā what else could I use?
Our top pick is Boursin cheese! Otherwise, some creamy avocado, feta cheese, or blue cheese will work well.
Kale Beet Salad Recipe
Ingredients
- 1 Ā½ lb beets (peeled and quartered ā or cut into bite-sized pieces if you're using large beets)
- 1 tablespoon extra virgin olive oil
- 1 cup walnut halves
- 3 tablespoons pure maple syrup
- Ā¼ teaspoon sea salt
- ā teaspoon fresh cracked pepper
- 4 packed cups of curly kale (washed and torn into bite sized pieces)
- Optional: Ā¼ cup goat or Boursin cheese (a diced avocado makes a great alternative to creamy cheeses in salads!)
The Dressing
- 3 tablespoons apple cider vinegar
- 2 tablespoons honey (use maple syrup for vegan)
- 1 teaspoons balsamic vinegar
- Ā½ teaspoon dijon mustard
- 1 clove garlic (grated on a Microplane or very finely minced)
- A pinch of sea salt
- Ā¼ cup extra virgin olive oil
Instructions
- Preheat the oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper. Place the beets on the prepared baking sheet and drizzle the oil over top. Use your hands to toss them in the oil. Cover the baking sheet with aluminum foil and bake in the oven for 30-40 minutes, or until they can be pierced with a fork.1 Ā½ lb beets, 1 tablespoon extra virgin olive oil
- While the beets are roasting prepare the rest of the salad. Add the walnut halves to a small frying pan over medium heat. Let them cook until they are fragrant and start to brown in places, shaking the pan frequently. Pour over the maple syrup and sprinkle with sea salt and fresh cracked pepper. Let them cook, stirring constantly, until the maple syrup has almost evaporated, about 1 minute. Remove the walnuts from the pan and place them on a piece of parchment paper, separating them from each other as much as possible.1 cup walnut halves, 3 tablespoons pure maple syrup, Ā¼ teaspoon sea salt, ā teaspoon fresh cracked pepper
- To make the dressing, combine all the ingredients EXCEPT the oil in a medium-sized bowl. Slowly add the oil in a thin steady stream while whisking the dressing constantly. If the oil starts to build up at all stop pouring it and whisk the dressing vigorously. It will take you about 1 minute to whisk in the oil. Taste the dressing and season it with extra salt, to taste.3 tablespoons apple cider vinegar, 2 tablespoons honey, 1 teaspoons balsamic vinegar, Ā½ teaspoon dijon mustard, 1 clove garlic, A pinch of sea salt, Ā¼ cup extra virgin olive oil
- Add the kale, candied walnuts, and, if using, the cheese or avocado to a large bowl. When the beets come out of the oven let them cool slightly then add them to the bowl too. Pour the dressing over top and toss well so that everything is coated.Optional: Ā¼ cup goat or Boursin cheese, 4 packed cups of curly kale

I loved this salad. I added some quinoa because I had some on hand already cooked. I didnāt candy the walnuts either, but I was fine without the added sugar. The dressing is good too.

Wow! I do not care for any of these ingredients (kale, beets, walnuts) separately, but together these are delicious! this is going into my permanent book of recipes.
