I don't know about you but trying to pack healthy lunches that are actually worth eating usually feels like a big pain in the you know what. Sandwiches? Again? Booorrring.

Sautée the chorizo and sweet potatoes and pop them into a little tupperware container. Bring a Swiss chard leaf with you for a healthy (and naturally gluten free) lunchtime wrap.

I know I talked about sandwiches being boring at the beginning of this post, but … this one is anything but. Salty prosciutto, crunchy walnuts, sweet balsamic fig jam and creamy blue cheese make this a pretty unforgettable sandwich.
