Bruschetta Chicken Lettuce Wraps are the ultimate easy and delicious summer dinner recipe. Chicken lettuce wraps + bruschetta chicken is basically what I want to eat all summer long. I love how this recipe hits that sweet spot between fresh and satisfying, especially on warm evenings when I want something delicious without feeling weighed down. The grilled chicken gets those irresistible char marks, then it’s topped with crunchy peppers, pretty purple cabbage, and finished with a drizzle of sweet, reduced balsamic. Wrapped up in crisp lettuce leaves, every bite feels bright, juicy, and just a little bit special.
And the best part? I don’t stop making this when summer ends. When the weather turns and standing at the BBQ feels less appealing, I just cook the chicken on the stovetop instead. A hot pan, about five minutes per side, and it’s ready to chop and pile into lettuce cups. Same great flavors, same easy dinner — no grill required.

Bruschetta Chicken Lettuce Wraps Recipe
Ingredients
The Grilled Chicken
- 4 boneless chicken thighs
- 1 tablespoon olive oil
- 2 teaspoons EACH: paprika, garlic powder, and onion powder
- 1 teaspoon EACH: sea salt and pepper
- 2 tablespoons store-bought bruscetta
The Bruschetta Lettuce Wraps
- 6 pieces bibb lettuce (AKA butter lettuce)
- ¼ orange pepper (chopped)
- ¼ yellow pepper (chopped)
- ¼ cup thinly sliced red cabbage
- 2 tablespoons minced red onion
- 6 tablespoons store-bought bruschetta
- 1 tablespoon reduced balsamic vinegar
- store-bought tzatziki
Instructions
- Preheat your grill to medium-high. Toss the chicken thighs with the olive oil, paprika, garlic powder, onion powder, salt, and pepper. Place the chicken on your grill and cook for 6 minutes per side, or until it reaches an internal temperature of 165 degrees Fahrenheit.4 boneless chicken thighs, 1 tablespoon olive oil, 2 teaspoons EACH: paprika, garlic powder, and onion powder, 1 teaspoon EACH: sea salt and pepper
- Remove the chicken from the grill then chop each piece into 4 pieces. Put the chopped chicken in a bowl and toss it with the bruschetta.2 tablespoons store-bought bruscetta
- Divide the chicken between the lettuce leaves and top with the peppers, cabbage, red onion, and bruschetta. I made some homemade bruschetta over the weekend, so when I saw this recipe, I knew just how to use up the leftovers. At my local grocery store, thin, pounded-out turkey breasts were on sale, so I used that for the meat. I cut it into bite-sized pieces and coated it in the seasoning and a bit of oil. Then I cooked it in a pan. While it cooked, I prepared everything else, and was ready to eat in less than 10 minutes! I also couldn’t find the right kind of lettuce for wraps so I just made it into a regular salad which made it even quicker.
My husband’s 93-year-old grandma recently moved in with us and she practically licked her bowl clean. She was eager to find out when I’d be trying another one of your recipes! =D And here’s the kicker… she’s Bavarian and only accustomed to Bavarian and German food (we live in Germany). So for her to rave about something new is a pretty huge deal!
