Breakfast is my favorite meal of the day. Actually, I love breakfast food so much that I could have it for dinner most nights too. I rarely miss breakfast and when I do I'm very cranky. Experts say that our mornings dictate our day so I try to keep that in mind every morning. Truthfully, sometimes it works and I'm super productive and other times I don't shower until 3PM. My morning routine is something that I’ve really been working on. I’m not a huge morning person but I love the feeling of starting the day off productive and strong. Plus, with the summer heat and my Siberian Husky pup, I have to do our long walks early in the morning. By the time we get done with our 2+ miles in the morning, I’m ready for a big bottle of water and a healthy breakfast. So, I'm off to a good start.
In the last few months, I’ve gotten pretty routine with my breakfast meals though. I found a breakfast that works for me, is healthy, delicious, and easy. Basically, it’s scrambled eggs, sausage or bacon, fresh, in-season sliced tomatoes with some of that Everything But The Bagel seasoning from Trader Joe’s sprinkled on it. I’ve done that every. single. day. for almost a month. Well, once in a while, I need some diced potatoes for some carbs but no other variation. Now, while I like that breakfast (I’m having it this morning!), it’s time for a change. I’m wrapping up my journey on Whole30 and I have about 10 days left. I need these last few days to have some variety to them with the Tomato Zoodle Frittata or Smoked Salmon Eggs Benedict. But, when I get done, look out pumpkin muffins, peanut butter oatmeal, and pancakes/waffles. I won’t go overboard in September but it’s going to be epic…yet still healthy…except that Chicago pizza that is happening. No excuses and no regrets on that one.
