We are all busy with friends, family, work, community engagement and more. The key to staying healthy during hectic times (or not so hectic times) is planning ahead. When I worked in the corporate world, I never had enough time to be creative with my meals. Basically, my day consisted of walking my dog, getting ready, running late out the door to catch the bus, to a train, then run into work. I might grab a sandwich at a local deli, work all day, go out for lunch, then do the commute thing again, walk my dog, feed her, then it’s 8 pm and I’m exhausted. I eat two pieces of turkey bacon or order food and my day is over. And, that wasn’t even on days when I was actually busy with meetings or friends or anything. I gained weight. I was always exhausted and things were not so good.

Then, I caught on to this whole meal prep thing. On Sundays, I would make most of my meals for the week. I would meal prep breakfast, make up some salads, throw something in the slow cooker, and then make one or two recipes. I lost weight. I fed my body vegetables and generally had more time during the day because I didn’t have to search for food or figure anything out.

Meal prepping is all the rage these days because it is so easy to do and really frees up your evenings for Netflix, drinks with friends, wine on the balcony, and all those fun things we actually want to be doing during our day. Meal prepping recipes are all over, which makes it much easier to do this than it was for me five years ago. These healthy meal prep recipes will have you up and running in the meal prepping world super quickly.
