Soup isn’t just for fall and winter. If you’re like me, you’re such a fan of soup that you’d eat it in any season. This round-up of summer soup recipes focuses on refreshing soups that can be served cold or soups that are made with the best of our favorite summer produce!

What makes a soup a summer soup recipe

Summer soup recipes are all about keeping things light, refreshing, and seasonal. Winter is the time for slow-simmering hearty bowls, but summer is for bright, fresh ingredients – like tomatoes, cucumbers, or herbs. In North America, soups are often bookmarked for the sunnier months, as if they’re just ‘winter food.’ But in other places, like Spain, soup is a summer staple. They’re served chilled, gazpacho-style.

The best summer soups highlight the produce of the summer months, balancing flavor and hydration for days when you don’t want a heavy dinner. It’s all about keeping it light and refreshing. If you need more than soup, add some homemade bread to the menu, like this no-yeast bread with herbs and cheese or these southwest quinoa muffins.
