Make this peanut salad dressing in five minutes using kitchen staples. It’s full of flavor and delicious on crunchy salads and coleslaws. You can also use this versatile salad dressing as a marinade, dip, or stir-fry sauce.

It’s a delicious salad dressing that gets its creaminess from peanut butter, so it is 100% dairy-free.

Lime juice, ginger, garlic, soy sauce, and sesame oil give it a flavor that is reminiscent of a Thai peanut salad dressing.

We love it poured over crunchy greens or coleslaw, but it is every bit as delicious used as a dip for chicken or tofu.

What to serve with a peanut salad

Peanut dressing brings an Asian vibe to the dinner table. We love serving this with our garlic ginger chicken. A few other recipes that go well are:

  • Coconut Milk Braised Chicken

More ways to use peanut dressing

This versatile recipe can be used as a sauce, dip, or marinade. Here are a few options:

  • As a marinade for chicken or tofu.
  • A dip for veggies.
  • Or a spring roll dip.
  • A saté sauce for your roast chicken or vegetables.
  • Mix it into some rice.
  • Pour it over just about anything on your plate.

Make this peanut salad dressing in five minutes with kitchen-staple ingredients. It’s full of flavor and delicious on crunchy salads and coleslaws. You can also use this versatile salad dressing as a marinade, dip, or stir fry sauce.

Ingredients

  • ½ cup smooth all-natural peanut butter
  • ¼ cup lime juice
  • 1 tablespoon soy sauce
  • 1 tablespoon ginger (finely minced)
  • 2 teaspoons toasted sesame oil
  • 2 cloves garlic (finely minced)
  • ¼ – ½ cup water (see notes)
  • Sea salt (to taste)

Instructions 

  • In a medium-sized bowl, whisk the peanut butter, lime juice, soy sauce, ginger, sesame oil, and garlic. Thin with the water, starting with ¼ cup. (see notes.)
    ½ cup smooth all-natural peanut butter, ¼ cup lime juice, 1 tablespoon soy sauce, 1 tablespoon ginger, 2 teaspoons toasted sesame oil, 2 cloves garlic, ¼ – ½ cup water
  • Taste and add salt if needed. 
    Sea salt

Notes

Consistency: The amount of water you’ll need to add will depend on how thick your peanut butter is and how thick or thin you’d like the dressing to be. If you’re using it as a dip, you may not want to add any water. 
Sweetness: This is not a sweet salad dressing. If you’d like, you can add a little maple syrup or honey to sweeten it. 
Store: This salad dressing will keep well for at least one week in the fridge. Note that it will thicken when it’s cold. Don’t worry, mix in a little water and it will return to a deliciously pourable salad dressing.

How are the ginger and garlic cloves incorporated in the recipe? Are they ground before mixing with the rest of the ingredients? The steps are not clear.

You can buy gluten free soy sauce.

Tamari is traditional soy sauce and can be found without wheat.

I would like to make this but use PB2 instead of Peanut butter, do you know how much I would use?

This recipe hasn’t been tested with powdered peanut butter, and I don’t have a lot of experience with it. If you give it a go, let us know if it works!

1/4 cup of the PB2. Water to get the consistency you want.

Can you freeze it/ how long does.it last uth fridge storage?

The dressing will last up to 10 days in your fridge – no longer than that because of the fresh garlic. Peanut butter can be frozen so I suspect that this dressing would freeze well. We haven’t tested it to know for sure, but my guess is that it will work. If you try it, will you let us know if it works?
