These zesty Italian dressing potatoes are an easy and flavorful side dish to accompany any meal. They’re cooked in Italian dressing, baked to crispy perfection, then sprinkled with Parmesan. The best part is they’re simple to make and ready in under an hour!

When I’m looking for a reliable weeknight side, these Italian dressing potatoes are always at the top of the list. They roast up crispy on the outside and creamy in the middle, with plenty of herby flavor in every bite.

I toss small potatoes—halved or quartered—with Italian dressing, sea salt, and a drizzle of oil, then roast them until golden and tender. I usually use my homemade Italian dressing, but a good oil-and-vinegar–based store-bought version works just as well. Just skip anything creamy here, since it won’t roast the same way.

Right before serving, I finish the potatoes with freshly grated Parmesan and a sprinkle of minced parsley. It’s a short ingredient list with big payoff, and the kind of easy, dependable side dish I’m always happy to have in my back pocket.

Ingredients

  • 1 ½ lb small potatoes (halved or quartered)
  • ½ cup Italian dressing (see notes)
  • ½ teaspoon sea salt
  • ¼ cup grated parmesan
  • Minced parsley (to serve)

Instructions 

  • Preheat your oven to 400 degrees Fahrenheit. Place the potatoes in a baking dish, add the Italian dressing and salt, and mix the potatoes well.

  • Bake the potatoes until they are golden and soft, about 40 minutes, stirring halfway through.

  • Sprinkle the parmesan cheese over the potatoes and return them to your oven for 5 minutes more. Serve sprinkled with a little minced parsley over the top.

Notes

In this recipe, we use our homemade Italian dressing. If you’re buying one from the store, make sure it’s an oil and vinegar-based dressing and not a creamy one.
