Skip the sauce. 

There you have it, my friends. I know it may seem sacrilegious to do away with pizza sauce, but it totally works. Simply drizzle the pizza dough with some olive oil and voila, you're ready to add your toppings.

With this caprese pizza,  the tomatoes make a sort of pseudo sauce as the oven turns them soft and sweet. My little girl, who normally love the crust, was picking these tomatoes off and eating them like candy. She's too young to talk, so when she finished all of her tomatoes, she kept pointing to the tomatoes on our pieces of pizza and wanted those, too.

We've used the no sauce hack on all sorts of pizza recipes, not just caprese pizza. It's a great way to get your pizza on while skipping the most labor intensive part.

Normally, when I make pizza, I use this No Knead Pizza Dough recipe. It's the easiest thing ever to make and makes the best crust, but it takes 18 hours of thinking ahead. While I'd been thinking about this caprese pizza for a while, it was a little last minute when I decided to make it for you.

To shorten the time needed to let the dough rise, I added (quite a bit) more yeast to the dough. I eyeballed it, so I can't say exactly how much extra yeast I used. What I can tell you is that the pizza dough blew up like a balloon and took over my entire kitchen. Or pretty close to that.

Those little holes in the pizza crust are from where my fingers tips tried to tame the ever expanding crust. It was unruly and (almost) out of control. I'm usually a thin-crust, Neapolitan-style pizza gal. Adding extra yeast to the dough turned it into a thick-crust, chewy pizza crust. Lesson learned!

Ingredients

  • 1 pizza crust, gluten-free if needed (see notes)
  • Olive oil, to drizzle
  • 1 teaspoon flaky sea salt (I love Maldon)
  • 1 ball of mozzarella, sliced (sub vegan cheese, if needed)
  • 1 1/2 pints of cherry tomatoes, cut in half
  • A handful of basil leaves
  • Balsamic reduction, to drizzle (see notes)

Instructions

  1. Preheat your oven to the highest temperature and set a pizza stone or an upside down baking sheet on the middle rack.
  2. Either place the pizza crust on a pizza peel or lay it on a piece of parchment paper on a cutting board. (I use the parchment paper method.) Drizzle the crust with olive oil and sprinkle with sea salt. Lay the mozzarella onto the crust then heap with the cherry tomatoes. Carefully transfer the pizza to the pizza stone or upside down baking sheet (keeping it on the parchment, if using) and bake for 10-12 minutes, or until the crust starts to brown.
  3. Remove the pizza from the oven, top with some basil leaves, and drizzle with the reduced balsamic vinegar.

Notes

This is my fav pizza dough recipe. It's super easy to make, but it does require a little planning ahead. You could also try one of these Green Veggie Pizza Crusts for a grain-free option. Store bought crust would be the easiest option here!

You can buy bottles of reduced balsamic in most stores. If you don't have any on hand, simply boil some balsamic for a few minutes to reduce it. Remember that it will thicken considerably once it cools.
