This southwest veggie burger is easy to make and ridiculously delicious. My favorite vegetarian burger patty is topped with some Tex-Mex guacamole and smoky chipotle mayo. It's a hit with vegans and meat-eaters alike and the best way to green your grill this summer!


Any day that involves burgers is a good day. And we've been having a lot of good burger days around here. The grill has been getting quite the workout. These Tex-Mex burgers are my newest favorite summer recipe!

How to make this southwest burger
To make the best veggie burger, you need to start with the best veggie burger patty. Sure, you could slave away in the kitchen making one yourself. But since Sol Cuisine makes such delicious burgers AND they use only real ingredients that are non-GMO, then it's totally ok to let Sol Cuisine do the hard work for you. They have been leading the way for more than 20 years in plant-based proteins so these guys know what they're doing. Give it up for eating well while taking it easy!
I decided to use Sol Cuisine's Portobello Mushroom and Quinoa Burgers in this recipe. I love the way that they taste and they go really well with the southwest flavors. But honestly, all that I've tried have been amazing. I think that these burgers would also be delicious in this recipe:
- Extreme Griller – the most ‘meaty' of all Sol Cuisine's burgers. Perfect for the meat-eater who wants to add some plant-based protein to their diet.
- Spicy Black Bean Burger – with a little spice and dotted with corn, this is one of my favorites
- Chickpea Sweet Potato Burger – sweet potatoes make this burger patty a natural for a southwest veggie burger.
Once you have your burger patty picked out, the rest of the recipe comes together easily.
- Grill or pan-fry your burger.
- Mix some corn, red peppers, onion, and cilantro into guacamole.

What is southwest guacamole
The best burger guacamole ever! But seriously, it really is. What makes it the best is that it's all the flavors you want in a southwest burger all together in one convenient place. Cause imagine this: piling your burger high with little corn kernels, diced red pepper and onions, and slippery slices of avocados. Now imagine squishing that burg together to take a bite and ending up covered in a rainfall of corn, pepper, and onion niblets and splattered with avocado. Insert sad face.
But with this southwest guacamole, all of your problems disappear. The guacamole wraps itself around the corn, pepper, and onions and sticks them onto your burger. It's a little avocado magic.
What to put on your southwest burger
To make the best southwest veggie burger, you need some great Tex-Mex burger toppings. While I love the combination of the southwest guacamole and chipotle aioli, you can go crazy and add all sorts of burger toppings. Here are a few of my favorites:
- Caramelized onions
- Pickled jalapeños
- Pepperjack cheese (vegan, if needed!)
- Black beans (mixed into the guacamole!)
- Crispy tortilla chips

Southwest Veggie Burger Recipe
Ingredients
Veggie Burgers
- 1 teaspoon avocado oil (for the pan or to oil your grill)
- 4 Sol Cuisine Burger patties
- 4 burger buns (gluten-free, if needed)
- 4 romaine lettuce leaves
- 2 small tomatoes (sliced)
- ¼ cup chipotle aioli (vegan, if needed)
Southwest Guacamole
- 1 cup guacamole (store-bought or homemade – see notes)
- ½ cup each: minced red pepper and corn kernels (thawed, if frozen)
- ¼ cup each: minced white onion and cilantro
Instructions
- Pan-fry or grill the Sol Cuisine burgers over medium-high heat for 6 minutes per side. Toast the burger buns, if desired.1 teaspoon avocado oil, 4 Sol Cuisine Burger patties, 4 burger buns
- While the burgers are cooking, make the southwest guacamole. Mix the red pepper, corn, onion, and cilantro into the guacamole.1 cup guacamole, ½ cup each: minced red pepper and corn kernels, ¼ cup each: minced white onion and cilantro
- Place the lettuce and tomato slices on the bun bottoms then top with the burger patty, a big scoop of guacamole, a tablespoon of chipotle aioli, and the burger bun top.4 romaine lettuce leaves, 2 small tomatoes

Notes
- Sol Cuisine Burgers are made in a facility that produces gluten.
- To make 1 cup of homemade guacamole, mash 2 ripe avocados with the juice from 1 lime, 1 small minced garlic clove, and a pinch of salt.
