This southwest veggie burger is easy to make and ridiculously delicious. My favorite vegetarian burger patty is topped with some Tex-Mex guacamole and smoky chipotle mayo. It’s a hit with vegetarians and meat-eaters alike, and the best way to green your grill this summer!

Any day that involves burgers is a good day, and we’ve been having lots of good burger days around here. The grill has been getting a serious workout, and these Tex-Mex veggie burgers are my newest summer obsession.

What I love about this southwest-style veggie burger is how hearty and satisfying it is. Start with your favorite store-bought veggie burger patties, then layer them with southwest guacamole—loaded with corn, red peppers, and cilantro—and finish by drizzling (okay, sometimes drowning) everything in chipotle aioli. When your burger is packed with good ingredients, you can absolutely lean into the toppings. Cook them on the BBQ or in a pan, your choice — either way, burger day just got even better.

What to put on your Southwest burger

To make the best Southwest veggie burger, you need some great Tex-Mex burger toppings. While I love the combination of the southwest guacamole and chipotle aioli, you can go crazy and add all sorts of burger toppings. Here are a few of my favorites:

  • Caramelized onions
  • Pickled jalapeños
  • Pepperjack cheese (vegan, if needed!)
  • Black beans (mixed into the guacamole!)
  • Crispy tortilla chips

Two more vegetarian burgers to put on your must-try list are my black bean burgers and cauliflower quinoa burgers.
