This chicken cabbage stir fry is quick to make (only 25 minutes!) and totally delicious. Tender chunks of chicken are cooked with cabbage noodles, some broccoli, and red peppers. It’s an easy and inexpensive dinner recipe that will make your weeknight evenings a whole lot tastier.

If you love quick and easy weeknight dinners, this cabbage stir fry is one of those recipes you’ll want to keep on repeat. It’s the kind of meal I make when I want something satisfying and flavorful without a lot of prep or dishes—and bonus points for sneaking in a big pile of veggies.
Once the cabbage hits the pan, it softens and turns almost noodle-like, so it feels hearty and comforting while still being veggie-forward. The simple two-ingredient sauce adds just the right amount of flavor without slowing you down, and the whole thing comes together in about 25 minutes—often faster than waiting for takeout. And while the leftovers might not be quite as pretty the next day, they’re still every bit as delicious.


Cabbage stir fry sauce ingredients
This is the recipe I reach for when I’m short on time, so I’ve kept the sauce ingredients very simple. The base of the sauce is soy sauce, which adds plenty of savory flavor without needing anything fancy.
For the chicken, I mix the soy sauce with a bit of mayonnaise. It might sound unexpected, but it makes the chicken just slightly creamy and helps the sauce cling to every bite.
The ingredient list is intentionally short to keep things easy, but if you have a few extra minutes and want to dial up the flavor, you can absolutely do that. Try adding a couple of minced garlic cloves, 2–3 teaspoons of minced ginger, and a teaspoon of sesame oil while the veggies cook. It’s a small upgrade that adds lots of depth without much extra effort.

Ingredients
The Chicken
- 4 medium chicken breasts
- ½ teaspoon black pepper
- 1 tablespoon cooking oil
- 2 tablespoons mayonnaise
- 1 tablespoon soy sauce
The Cabbage Stir Fry
- 1 tablespoon cooking oil
- 3 cups cabbage
- 1 medium red pepper (sliced)
- 1 small head of broccoli (cut into florets)
- 1 tablespoon soy sauce
Instructions
- Cut the chicken breasts into 4 strips each and sprinkle with pepper. Heat the oil in a large frying pan over medium-high heat. Add the chicken and sear for 5 minutes on each side, or until no longer pink in the middle.4 medium chicken breasts, 1 tablespoon cooking oil, ½ teaspoon black pepper
- While the chicken is cooking, chop the veggies. In a medium-sized bowl, mix together the mayonnaise and soy sauce. When the chicken is cooked, add it to the bowl and toss to coat.2 tablespoons mayonnaise, 1 tablespoon soy sauce
- Add the remaining tablespoon of oil to the pan along with the cabbage, red pepper, and broccoli. Cook for 2-3 minutes, or until the veggies just barely start to soften. Add the soy and cook, stirring a few times, for another 3 minutes.1 tablespoon cooking oil, 3 cups cabbage, 1 medium red pepper, 1 small head of broccoli, 1 tablespoon soy sauce
- Divide the cabbage stir fry between 4 plates and top with the chicken. Drizzle any sauce left in the bowl over the cabbage.
