
Roasted Dill Carrots (with lemon feta dressing)

These delicious dill carrots are roasted until tender, then tossed in a homemade lemon dill dressing and topped with tangy feta cheese. It’s an easy side dish that goes with just about anything, and it’s ready in 40 minutes!

Not sure what it’s like around your kitchen, but we always seem to have a half bag of carrots in our I don’t know about your kitchen, but I always seem to have a half bag of carrots lingering in my fridge. That’s exactly why I love recipes like these dill roasted carrots—they’re quick, simple, and turn a humble vegetable into something I actually get excited to serve. Roasting brings out the carrots’ natural sweetness, and the lemon-dill sauce takes them into crave-worthy territory.
The carrots come out of the oven tender and lightly caramelized, then are tossed in a bright, tangy dressing made with lemon juice, olive oil, honey, Dijon mustard, and plenty of fresh dill. The flavors are fresh and balanced—sweet, citrusy, and a little savory—and if I’m in the mood, I’ll finish them with a crumble of feta for a salty, creamy contrast.

When it comes to what to serve with these dill carrots, pretty much anything goes. They’re an easy side dish for weeknights and the perfect accompaniment to meat mains of all kinds. They make a delicious vegetarian side dish, and they look beautiful on a holiday table, too!

Roasted Dill Carrots (with lemon feta dressing)
Ingredients
Lemon Dill Dressing
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon honey
- 1 teaspoon dijon mustard
- 2 tablespoons minced fresh dill (or 2 teaspoons dried dill)
Instructions
- Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper. Put the sliced carrots into a bowl and toss them with olive oil, garlic powder, onion powder, salt, and pepper.2 ½ lb carrots, 1 tablespoon olive oil, ½ teaspoon EACH: garlic powder, onion powder, salt, and pepper
- Spread the carrots out on the baking sheet and roast in the oven for 30 minutes.
- While the carrots are roasting, make the sauce. In a small bowl, whisk the olive oil, lemon juice, honey, and dijon. Mix in the chopped dill.1 tablespoon olive oil, 1 tablespoon lemon juice, 1 teaspoon honey, 1 teaspoon dijon mustard, 2 tablespoons minced fresh dill
- When the carrots are cooked, transfer them to a serving bowl and pour the dressing over the top. Add the feta cheese and toss well. Serve right away.¼ cup feta cheese

The fresh dill dressing takes a basic roasted carrot to the next level! So good! Unfortunately I had to leave out the feta when I found out mine had gone bad. I halved the recipe and served as a side with the juicy pork chops and extra crispy roasted potatoes which are two other fabulous recipes from the blog.

Made this delicious side dish today and WOW is all I can say. The flavours meld together famously. I used a grainy dijon and a goat/Sheep feta. Those are the only deviations to Kristen’s recipe.

I made these for the cooking club. I really liked the flavors, and they were a nice winter veg to serve with Greek-inspired chicken. For me, it took a while to cut the carrots, so plan to allow more than 40 minutes total, but worth it if you have the time!

Wonderful recipe, so full of flavor. Used carrots from the garden. The feta kind of got lost when plating, should have added after the were on the plate. Next time, which will be soon.

Baby carrots are a favorite snack in my house so there are always some that need using up. They roasted up beautifully and were delicious but I think the star is the dressing! It is light and fresh and so good!
