I hate to be the one to break it to you but summer is on its way out the door. Some of you may still be in denial and some of you join me in welcoming fall back with big open arms and a nice chunky cardigan.
Alright, it isn’t quite fall yet and it is way too hot for a cardigan but kids are back (or on their way) to school, our summer vacations are over, and things are getting back to normal. For most of us (kids or no kids), our schedules get a lot more packed with meetings, activities, social engagements and then back to school responsibilities to top it all off.
What the constant in every season is: we are always hungry. Some of us get hangry. As I learned this summer a few times, if I didn’t feed my 8-year-old niece in a reasonable time frame, my cute, sweet niece turns into a hangry little dictator. So, in the name of saving you from hangry kids, spouses, or selves this fall, we put together an utterly delicious roundup of easy healthy dinner recipes for the back to school season.
Even though we are all busy, we still want to eat healthy and delicious dinners. The catch is that they must be easy and fairly quick for most weeknights.
