How is it almost Easter already? Is this year flying by for anyone else? I was just looking at the calendar yesterday and realized that we are a few days away from the end of the first quarter. At the beginning of each year, I sit down and think about what I want to accomplish. The big realization is that I need to get my butt into gear if I’m going to accomplish my big goals for this year. How are your goals coming along? It’s a great time to assess your goals if you haven’t already.
One of my goals for the year is to decrease the amount of meat I eat in a given week, month, and year. I’ve actually done pretty well with this goal so far this year. I’m not a full vegetarian but four days this week I didn’t eat meat, which is great for me.
Easter usually has a decent amount of meat, including ham or lamb. But, I love the idea of a completely vegetarian Easter brunch!
