It’s almost St. Patrick’s Day and I’m pretty much ready to celebrate all week long. Here in Chicago, St. Patrick’s Day is huge. The city dyes the Chicago River green. The entire city is out and about first thing in the morning, partying until they can’t walk. For some people, that status hits about noon. Some make it all day, which is insane. When I was younger, I was all about this craziness. But, being in my mid-thirties means things are much tamer on St. Patrick’s Day.
We still celebrate but try not to be too crazy. We kick it off with a St. Patrick’s Day brunch that is incredibly delicious and fun. What I found was part of my issue with not feeling well on some of these drinking holidays was that the amount of sugar in drinks and food would make me absolutely sick—not the alcohol. Okay, well, probably a mixture of the two. 🙂 So, in recent years, we’ve found healthier options to eat at our morning brunch to start the day off right. And, no crazy mixed drinks for me!
What I love about the 15 Best Healthier St. Patrick’s Day Recipes roundup is that all the recipes are super tasty and still healthier for you than some of the traditional recipes. Also, not everyone is a corned beef and cabbage fan, myself included, so it’s great to find some fun, green recipes that you can celebrate the holiday with too.
So, as you plan your St. Patrick’s Day celebration, make sure to include at least one of these recipes. They are so amazing!

This insanely delicious Irish Cheddar Cauliflower is first tossed in spices and roasted in the oven. Then it's topped with Irish cheddar and popped back in the oven until it melts. It's like cauliflower with cheese sauce only a thousand times better.
Want some finger lickin' good sticky chicken? This Guinness Chicken has your name on it! Chicken thighs are first seared light brown then cooked in an easy to make sticky sauce made with your favorite Irish beer. It's my newest favorite chicken recipe!
Green goddess chicken is juicy and deliciously flavorful. Chicken thighs are marinated in our favorite green goddess dressing and then quickly cooked in a pan. It's a healthy dinner recipe that's easy to make and big on flavor.
Lamb lollipops are marinated then seared in a hot pan for a few minutes until lightly charred and incredibly delicious. They are simple to make yet the flavor is outstanding. We like ours with an easy mint pesto for dipping!
Just in time for St. Patrick's Day, but perfect for any day, is this Guinness Crock Pot Beef Stew recipe. I've snuck a little chocolate in here, too. I know it sounds strange, but you don't actually taste the chocolate; it simply adds a little richness to the stew. You will LOVE it!
This whole wheat Irish soda bread is simple, hearty, and perfect for dunking into stew. It's a traditional loaf made from just a few basic ingredients. You'll be surprised at how easy it is to make, and it's ready in just 55 minutes!
Afternoon tea just got more colorful with these delightful matcha cookies. The subtle earthy taste of matcha is perfectly paired with vanilla and creamy white chocolate chips. They're simple to make with pantry ingredients, fun to eat, and ready in just 20 minutes!
This insanely delicious and totally moist Guinness Chocolate Cake is topped with a thick layer of Irish whiskey buttercream frosting. It's made in only one bowl and is totally foolproof. The cake also happens to be vegan – but don't make it (or not make it) because of that. Make it because it's the best chocolate cake ever.
These Shamrock Sugar Cookies are made with my all-time favorite soft sugar cookie recipe. The frosting is tinted bright green with an easy to make all-natural food dye. There's no creepy artificial color in these cookies! Happy St. Patty's Day!?
Love them all! Especially the beef stew. Chocolate in beef stew is such an amazing thing that I just started doing a couple years ago. So good! Thanks for the fool loving! XOXO!
