Part of my new healthier diet is vegetables, and I mean a lot of vegetables. I’m eating a much more plant-based diet these days. I’ve heard it called ketotarian or healthy keto. Basically, I’m eating a whole lot of veggies, limiting my meat intake a bit, and generally seeing a rainbow on my plate. My biggest vegetable categories are broccoli, cauliflower, and zucchini. They make up a bulk of my recipes that aren’t salad.

To sustain this newish lifestyle (thanks hormones and auto-immune disease!), I have to get creative with my recipes. I can’t just eat salads. I can’t just saute some zucchini or bake broccoli every night. I don’t know about you but if I tried to be that restrictive and boring, I would end up binging on some not-great-for-me foods from Doordash.

After the holidays, we all could use a little more color and vegetables in our diets so we thought we’d share with you about 50 of the best zucchini recipes from around the internet. There’s a little bit of everything so most diets and lifestyles are covered. We even included a little roundup of zucchini desserts for those times where you want a little something sweet but still want it to be on the healthier side. Or, for when it's summer and you planted too many zucchini plants and all of sudden you have a laundry basket full of zucchini. Not saying that didn’t happen to me once or twice. LOL.
