We are days away from Cinco de Mayo and we are gearing up for next weekend with the 15 Best Easy Healthy Taco Recipes. There’s a taco (or 5) for everyone!
Tacos are my favorite food group. I eat tacos at least once a week. So, I feel like the week leading up to Cinco de Mayo is going to be crazy delicious. Tonight, I’m starting with skillet nachos and I’m not stopping until Saturday! 🙂
Tacos are amazing and, for the most part, pretty dang healthy. Granted, I’ve had some tacos that are not the healthiest. I’ve had a pina colada shrimp taco that was amazing but so many calories! Then there’s the fried chicken tacos and the battered fish tacos that are damn tasty but…I can’t eat those tacos every night of the week. I do love that tacos can be vegetarian, vegan, dairy-free, and gluten-free and still be incredibly delicious! Plus, tacos are easy to make. If they are too difficult or time-consuming, I’m usually not making them. These 15 Best Easy Healthy Taco Recipes fit the bill: easy, healthy, and delicious.
And, of course, it’s not just about tacos. I’m preparing a whole party menu for next Saturday including: Chunky Grilled Guacamole, Lightened Up Mexican Corn Dip, and Fresh Pineapple Margaritas. I’m making a few of these tacos this week leading up to Cinco de Mayo but making a decision about which taco recipe to make is going to be difficult. They all look great. Choices, choices. I want them all!
