These Instant Pot pork chops are an easy and satisfying one-pot dinner. I’ll teach you how to make tender pork chops with golden, seared edges, then finish them with a rich, flavorful gravy!

My family loves pork chops, so this Instant Pot version quickly became a staple. Pressure cooking gives you pork chops that are unbelievably tender and juicy, with none of the dryness that can plague stovetop or oven methods. The seasoning is simple but bold, and a quick sauté adds deep, savory flavor before everything finishes under pressure.
What I love most is how easy this is. You season the pork chops, give them a quick sear using the sauté function, then let the Instant Pot do the rest of the work. The high-pressure locks in moisture while keeping the texture perfectly tender, and the cooking liquid turns into a simple, glossy pan sauce at the end. I use my Instant Pot DUO Plus 8 Qt, and it handles thick-cut pork chops beautifully—fast, hands-off, and consistently delicious.

Three golden tips
Here are my top three tips for Instant Pot pork chops:
- Don’t skip the spice rub: Seasoning the pork chops before cooking builds big flavor from the start. The brown sugar adds a touch of sweetness, garlic and onion powder bring savory depth, and paprika, oregano, salt, and pepper tie it all together.
- Don’t skip the sear: Using the sauté function to brown the pork chops adds color and deep, savory flavor. It also creates those tasty browned bits that make the sauce so good.
- Don’t skip the gravy: Deglazing the pot with chicken stock lifts all those flavorful bits from the bottom, turning the cooking liquid into a rich, savory gravy that finishes the dish perfectly.
How long to cook bone-in pork chops in an Instant Pot?
For this recipe, I sear the bone-in pork chops for 2-3 minutes per side, then set the pressure cooker to ‘high’ for 5 minutes. When they’re done, I allow the pressure to release slowly for another 10 minutes.
How long to cook boneless pork chops in an Instant Pot?
Boneless pork chops will cook a bit more quickly than bone-in pork chops. Depending on the size, you can reduce the pressure-cooking time to 3 or 4 minutes, while still allowing about 10 minutes for the slow release.

Instant Pot Pork Chops Recipe
Ingredients
- 2 teaspoons brown sugar
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1 teaspoon salt
- 1 teaspoon pepper
- 4 thick-cut pork chops
- 1 tablespoon olive oil
- 1 cup chicken stock
- 1 tablespoon cornstarch
- 1 tablespoon water
Instructions
- In a small bowl, mix the brown sugar, onion powder, garlic powder, paprika, oregano, salt, and pepper. Sprinkle the spices evenly over both sides of the pork chops.2 teaspoons brown sugar, 2 teaspoons onion powder, 2 teaspoons garlic powder, 1 teaspoon paprika, 1 teaspoon oregano, 1 teaspoon salt, 4 thick-cut pork chops, 1 teaspoon pepper

- Turn your Instant Pot to saute mode (low heat) and heat the olive oil. Add the seasoned pork chops, 2 at a time, and sear for 2-3 minutes on one side, until they are well-browned. Add more olive oil if needed and repeat with the remaining pork chops. See notes.1 tablespoon olive oil

- Add the chicken stock and scrape the bottom of the pot with a wooden spoon to remove any stuck-on bits. Return all the chops to the pot then secure the lid and close the vent. Set the Instant Pot to pressure cook (manual) for 5 minutes. When it's done, allow the pressure to release naturally for 10 minutes, and then open the steam vent and allow the rest of the pressure to release.1 cup chicken stock

- Remove the pork chops from the pot. Mix the cornstarch and cold water in a small bowl and pour it into the pot. Stir until it thickens to a gravy.1 tablespoon cornstarch, 1 tablespoon water

- Serve the pork chops with the gravy poured over top.

I used pork forequarter chops for this recipe and it turned out great. I added powdered mustard into the rub and parsley instead of oregano and sliced mushrooms browned after the chops which added and nice umami flavour to the dish I thought. I paired it with baked seasoned cauliflower, broccoli and pumpkin and smashed spuds… delicious… Sorry no pics

This was absolutely amazing! I’m a little late to the instant pot game, this was the second time I used it and the pork came out perfect! My family said it is officially in the dinner rotation. The only thing I added was French onion soup mix, I added to the seasoning to the pork and to the broth.

This was good but I’m not a big fan of oregano. I made it by the recipe except I used fresh minced garlic and onions. I put them in and sauteed them slightly before putting the chops in to sear. These were very tender. To get a thicker gravy I put it back on saute before adding the slurry. I’ll make these again but adjust the seasoning without the oregano and maybe add some pepper instead and a little less brown sugar. Great instructions as I’m new to the instant pot. Sorry no pictures forgot before we ate.

How much chicken stock?
1 cup!
I made a small addition to your recipe already fabulous by substituting 1/2 of the cup of water with white wine to begin deglazing the pot and the gravy turned out amazing. It gave it another depth of flavor! The sides a chose to accompany the pork chops were an apple-butternut squash hash and green beans. Is it ok to do 6 pork chops? If so, Do I need to add more seasonings or adjust the cook time?
I would make 1 ½ times the seasonings. So 3 teaspoons of sugar, onion powder, and garlic powder and 1 ½ teaspoons of everything else. While not necessary for cooking, you may want to increase the amount of chicken stock so that everyone gets enough gravy.

Yes! Remember that they are seared first and stay in the hot pot for 10 minutes while the steam escapes.

Can I make this recipe in a regular pot?
You can! I’ve seared the chops on the stovetop and then added the liquid, covered the pan, and let them cook through. Works well!
