This cucumber margarita is cool and crisp, making it the perfect cocktail for sipping in the sun. It’s easy to make using five simple and fresh ingredients and ready in just 10 minutes!

It doesn’t get more refreshing than a margarita made with fresh cucumber. I skip the store-bought mixes (often packed with unwanted ingredients) and keep it simple with freshly blended cucumber juice, tequila, triple sec, lime juice, and a salted rim. The result is a clean, crisp margarita that’s light, bright, and incredibly refreshing.

I make the cucumber juice right in the blender, so there’s no need for a juicer or any fancy equipment. One English cucumber yields about a cup of juice, which is perfect for four margaritas. Fresh lime juice is key here—it gives the drink its bright snap without the odd aftertaste you get from bottled juice, while the tequila and triple sec bring classic margarita flavor with a subtle citrus note. If I’m making these for a crowd, I prep the cucumber juice ahead of time so all that’s left to do is pour, stir, and enjoy.

Give your margarita a spicy spin!

Add a kick to your cocktail by turning it into a cucumber jalapeño margarita. Simply add a few jalapeño slices to the glass before you pour in the other ingredients. Muddle it a bit with the back of a spoon to release the juices. Give it all a good stir, and that’s it!

How much jalapeño should I use? While the spiciness of jalapeños varies, about 3 thin slices will make a medium-spicy cocktail.

Make ahead

You can prepare the cucumber juice in advance. It will stay fresh in a sealed jar or container for 2-3 days. If you’re hosting a party and want to make a large batch, combine the ingredients in a big jar and refrigerate it a day ahead. When you’re ready to serve it, pour the cold margarita into glasses filled with ice.

Notes

Cucumber: One English cucumber will yield approximately 1 cup of cucumber juice, which is the amount that you’ll need for four cucumber margaritas. You can also use a field cucumber, but peel it before blending.
Is it possible to make a less boozy margarita? It sure is! To make a margarita a little lighter, skip the Triple Sec and use simple syrup instead. Or you can top your drink with a little sparkling water as we do in our fizzy lime margarita recipe.

It really needs a splash of agave or simple syrup.

If you like a sweeter margarita then a splash of agave is a great idea. I’m personally not a fan of sweet drinks so the triple sec makes it plenty sweet for me. Luckily margs are easy to adjust for different preferences!

What else, besides salt, is on the rim of the glass of the cucumber margarita?

It’s this smoky ancho salt from Born to Shake and it’s SO GOOD! Tajin is another rim salt that is widely available and really great.
