The warming, gooeyness of cinnamon rolls meets sweet, juicy peaches in this comforting, summery dessert. This cinnamon roll peach cobbler has the familiar flavors of our beloved cinnamon-spiced pastry and a luscious fruity filling with the tang of ripe peaches, so it’s cozy and refreshing at the same time.

This isn’t your average cobbler. Instead of the usual topping, I swap in cinnamon rolls, which bake up golden and slightly crisp on top while staying soft and doughy inside. That warm cinnamon flavor is the perfect contrast to the juicy peach filling, which gets a boost of vanilla and thickens into a luscious, syrupy layer as it bakes.

As it comes out of the oven, the peaches are bubbling and caramelized around the edges, and the cinnamon rolls are beautifully browned. A drizzle of icing over the top seals the deal, adding just the right amount of sweetness to every bite.

The best part? It’s made with just seven simple ingredients. All you need are unbaked cinnamon rolls, peaches, sugar, cornstarch, vanilla, cinnamon, and melted butter. Serve it with a scoop of vanilla ice cream for an easy, cozy, and fun twist on a classic dessert.

Ingredients

  • 16 ounces sliced peaches (see notes)
  • ¼ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • 12 ounces unbaked cinnamon rolls (see notes)
  • 2 tablespoons melted butter
  • Cream cheese icing (optional, see notes)

Instructions 

  • Preheat your oven to 350 degrees Fahrenheit and grease a 9” baking dish with butter. In a large bowl, stir together the peaches, granulated sugar, cornstarch, vanilla extract, and cinnamon and gently mix until the peaches are evenly coated. Transfer the peaches to your prepared baking dish.

  • Cut the cinnamon rolls into ½” pieces and add them to a medium bowl. Drizzle over the melted butter and mix to combine. Spread the cinnamon rolls over the peach layer.

  • Bake for 40-45 minutes, or until the cinnamon rolls are golden brown and the peach filling is bubbling around the edges. Remove the cobbler from the oven and allow it to cool for 10 minutes before serving– this will help the peach layer set. Serve warm with a drizzle of icing (if using) and a scoop of vanilla ice cream.

Notes

Peaches: Fresh peaches are wonderful in season, but frozen peaches make a great, year-round option. If using frozen peach slices, thaw and drain them before using them in the recipe. 
Cinnamon rolls: To make this recipe super easy, we’ve used store-bought, unbaked cinnamon rolls. The best ones are always found at local bakeries. In a pinch, you can use Pillsbury Cinnamon Rolls- Just know that cinnamon rolls in pop-open cans taste pretty mediocre. If you have a favorite cinnamon roll recipe, use that for the very best cobbler!
To make cream cheese icing, use an electric mixer to beat 4 tablespoons of softened cream cheese, 2 tablespoons of softened butter, and ¾ cup of powdered sugar. Once it’s smooth, you can thin it with a tiny splash of milk if you’d like.
