This simple kimchi mayo is a delicious blend of creamy mayo and bold spicy kimchi. It’s an easy-to-make hot condiment made with just two ingredients and the perfect sauce for burgers, tacos, hot dogs, or dipping fries and chicken!

This kimchi mayo is creamy, tangy, and slightly spicy—the kind of sauce that instantly makes everything more interesting. It comes together in about five minutes by simply blending kimchi with mayonnaise, and the result is smooth, punchy, and packed with savory depth. The richness of the mayo softens kimchi’s spicy-sour edge while letting all that fermented flavor shine through.

It’s the same kimchi mayo I use on my chicken karaage tacos, but I reach for it far beyond tacos. It’s incredible as a burger sauce, dunked with fries, or used as a dipping sauce for chicken. I love the bold flavor of Korean kimchi and am always looking for new ways to use it, and this quick sauce is one of my favorites. Make a batch and keep it in the fridge—it stores well for up to 10 days, and you’ll find plenty of excuses to use it.

How to serve kimchi mayo

Kimchi mayo is such a versatile condiment that adds a unique burst of flavor to dishes. Use it anytime you’d normally use mayo like on burgers, sandwiches, wraps, hot dogs, tacos, or as a dipping sauce for chicken or fries. Here are some recipes that I love using it in:

This simple kimchi mayo is a delicious blend of creamy mayo and bold spicy kimchi. It's an easy-to-make hot condiment that takes just two ingredients and is the perfect sauce for burgers, tacos, hot dogs, or for dipping fries and chicken!

Ingredients

  • ½ cup mayonnaise (can be light)
  • ½ cup kimchi

Instructions 

  • Add the mayonnaise and kimchi to your blender. Make sure not to add any liquid from the jar of kimchi or the mayo will be too runny.

  • Blend on medium speed until mostly smooth. Do not blend at high speed as it can cause the mayonnaise to break and become watery.

Notes

You can use your kimchi mayo right away or store it in the fridge for up to 10 days.

What a great idea…!!! Yet, why not “make” the kimchi, and “make” the mayonnaise??? Neither are difficult, yet kimchi does take time…!
