This simple kimchi mayo is a delicious blend of creamy mayo and bold spicy kimchi. It's an easy-to-make hot condiment that takes just two ingredients and is the perfect sauce for burgers, tacos, hot dogs, or for dipping fries and chicken!

We love the spicy-sour taste of Korean kimchi and we're always looking for more ways to use it. In this kimchi mayo recipe, we combine the creaminess of mayonnaise with the taste of kimchi that we love into a versatile sauce that will add dimension to any dish. It's super quick and easy to make with just two ingredients and extras can be stored in the fridge for up to 10 days!

What is kimchi?

Kimchi is a spicy, fermented cabbage (similar to sauerkraut) made with ginger, garlic, and Korean chilies. It's a staple food in Korean kitchens, used both in cooking and as a condiment.

It tastes tangy, salty, sour, and spicy and adds a lot of dimension to any meal. The fermentation process is what gives kimchi its distinctly sour taste.

It's become more popular in recent years so it's more widely available. You can find kimchi in the fridge at most well-stocked grocery stores.

Ingredients in kimchi mayonnaise

This simple sauce takes just two ingredients to make:

  • Mayonnaise – your favorite mayonnaise will make the base of the sauce.
  • Kimchi – spicy fermented cabbage flavored with ginger, garlic, and Korean chilies.

You'll also need a blender to make it nice and smooth.

How to make kimchi mayo

Making kimchi mayo at home couldn't be easier! Here's how it comes together in two simple steps:

  1. Add the mayonnaise and kimchi to your blender.
  2. Blend on medium speed until creamy. That's it! You can use your kimchi mayo right away or store it in the fridge for up to 10 days.

Can I make this mayo ahead of time?

Yes! Store it in the fridge in an air-tight container for up to 10 days.

How long can it stay at room temperature?

Because it contains mayonnaise, only keep it out of the fridge for a maximum of 2 hours.

How to serve kimchi mayo

Kimchi mayo is such a versatile condiment that adds a unique burst of flavor to dishes. Use it anytime you'd normally use mayo like on burgers, sandwiches, wraps, hot dogs, tacos, or as a dipping sauce for chicken or fries. Here are some recipes that we love using it in:

This simple kimchi mayo is a delicious blend of creamy mayo and bold spicy kimchi. It's an easy-to-make hot condiment that takes just two ingredients and is the perfect sauce for burgers, tacos, hot dogs, or for dipping fries and chicken!
1 cup

Ingredients

  • ½ cup mayonnaise (can be light)
  • ½ cup kimchi

Instructions 

  • Add the mayonnaise and kimchi to your blender. Make sure not to add any liquid from the jar of kimchi or the mayo will be too runny.
    ½ cup mayonnaise, ½ cup kimchi

  • Blend on medium speed until mostly smooth. Do not blend at high speed as it can cause the mayonnaise to break and become watery.

Notes

You can use your kimchi mayo right away or store it in the fridge for up to 10 days.
