Switch it up: Instead of shrimp, cube some chicken breast and cook it a few extra minnutes.
Green Chicken Enchiladas
This is a great “make everyone happy” dinner. Comforting, flavorful, and excellent for leftovers later in the week.
Black Bean Veggie Burgers
My family loves these burgers! I’ll often cook an extra patty for my daughter to take to school the next day.
Time saving tip: These freeze excellent. Make a double batch and freeze some (raw) for next week.
Green Goddess Dressing
This works beautifully as a salad dressing alongside the enchiladas, a sauce for the veggie burgers, or a drizzle over roasted vegetables through the week.
