Rainbow Pride Cookies

This is my favourite day of the year. It is the one day that the whole city gets together to celebrate love and diversity in all its glittery, sparkling, rainbow-coloured, techno-music-y joy. We celebrate freedom; the freedom to love whoever we want to love, because isn't that really what's important? Love and the freedom to be ourselves. I can't think of a better reason to put on a party dress, dust off my heels, hang handfuls of multi-coloured Pride beads around my neck and wave a rainbow flag down to the parade.

Last year close to 700,000 people came to watch the Pride parade. 700,000! You guys, Vancouver is a city of only 600,00 so more than the entire population of the city came to celebrate. I think that's pretty incredible.
Seeing everyone cheering and dancing along the parade route makes me ridiculously proud to be Canadian. Our politicians don feather boas and march alongside the city's most glamours drag queens (and kings!) Our firefighters hose down the crowds to cool us off, children run around blowing bubbles into the sunlight and the whole city dances as float after float of booty shaking eye candy rolls down the street.
If you've never been to Vancouver for Pride I'd put it on your vacation bucket list.

Every year, my friend John hosts a Pride brunch. We gather, we laugh, we dance, we eat and we pop bubbly long before noon. I've been promising these cookies for a few years now. I'll admit they look a little more like I was working on a project with a bunch of kindergarten kids rather than the sophisticated Pride cookies I was looking for. A+ for effort, though.
The idea for the cookies came from Katrina over at In Katrina's Kitchen. I've modified the Best Chocolate Chip Cookies recipe here on The Endless Meal to create these rainbow cookies. I think I like the original cookie recipe better but this one with the smarties and all the colour is definitely a lot more fun. Next time I make these I think I'll use chocolate chunks like in the original recipe rather than Smarties and I'll sprinkle the tops with Maldon sea salt.

Rainbow Sugar Cookies

Ingredients
- 2 cups all-purpose flour
- ¾ teaspoons baking powder
- ¾ teaspoons baking soda
- ½ teaspoon sea salt
- 1 cup butter, at room temperature
- ¾ cup brown sugar, packed
- ½ cup granulated sugar
- 1 teaspoon pure vanilla extract
- 2 large eggs
- Red, orange, yellow, blue, green, and purple food coloring
- 2 cups Smarties , or mini M&Ms
Instructions
- Preheat the oven to 375 degrees. Line three baking sheets with parchment paper.
- In a medium-sized bowl, whisk the flour, baking powder, baking soda, and salt in a medium bowl.2 cups all-purpose flour, ¾ teaspoons baking powder, ¾ teaspoons baking soda, ½ teaspoon sea salt
- Using an electric mixer, beat the butter, both sugars, and vanilla in a large bowl for 2 to 3 minutes, until light and fluffy. Add the eggs and blend well. With the mixer on low speed, add the flour mixture in three additions, blending until just incorporated.1 cup butter, ¾ cup brown sugar, ½ cup granulated sugar, 1 teaspoon pure vanilla extract, 2 large eggs
- Divide the dough into 6 small bowls. Add a few drops of the food coloring to the bowls, one color per bowl, and stir until the color is incorporated. Divide the Smarties between the 6 bowls and stir them into the batter.Red, orange, yellow, blue, green, and purple food coloring, 2 cups Smarties
- Working with one color at a time put about ½ teaspoon of the dough on 9 evenly spaced spots on one of the baking sheets. Next, put another ½ teaspoon of another color of dough so it touches the first color. Repeat until each cookie has all 6 colors and is about 2 inches wide.
- Bake the cookies for 6 minutes. Make sure not to overcook them or the colors will start to fade. Note: put the first tray of cookies into the oven before you start working on the next tray to save some time.
- Let the cookies cool completely before you store them in an airtight container.
These are so fun! Perfect pride cookies. I think they would be great fun at a kid’s birthday party too! I’m keeping this recipe in mind for my son’s birthday!
