This week’s recipes:
Cashew Shrimp (20 minutes)
This is the dinner I make when I want takeout flavor without the wait. The shrimp get a light coating and a quick sear, then go into a glossy, sweet and savory hoisin sauce with toasted cashews for crunch. Spoon it over rice and dinner is done.
Creamy Cheddar Ground Turkey Pasta (25 minutes)
This one is cozy, cheesy, and on the table in about 25 minutes. Fire-roasted tomatoes give the sauce a gentle smokiness, and cream cheese and parmesan make it silky. A blanket of melty cheddar goes on at the end, which tends to keep everyone hovering by the stove.
Juiciest Baked Pork Tenderloin (30 minutes)
The pork gets a simple paprika rub and a hard sear for a golden crust, then finishes in the oven with butter and a splash of apple cider vinegar. It comes out buttery soft, and the pan juices are worth spooning over everything on your plate.
Beet and Goat Cheese Salad with Maple Vinaigrette (40 minutes)
Sweet roasted beets, crisp greens, crunchy walnuts, and creamy goat cheese are all tossed in a tangy maple balsamic dressing. It wins over even the beet skeptics, and it’s so good next to the pork.
