Boneless Braised Leg of Lamb (3 hours 35 minutes)
This is the slow, cozy kind of dinner I save for a lazy weekend at home. The lamb braises in a garlicky herb broth until it’s so tender it falls apart when you slice it, and the pan juices become a rich, glossy gravy. It’s nearly impossible to overcook, so you can relax while the oven does the work.
Thai Fish Curry (25 minutes)
When I want something that tastes like a treat but comes together fast, this is what I make. Tender white fish gently poaches in a creamy red curry coconut sauce with crisp vegetables, and a squeeze of lime at the end brightens every bite. Spoon it over rice and dinner is done.
Cheesy White Bean Tomato Bake (20 minutes)
This is the dinner I eat straight from the skillet with a thick slice of bread for dunking. Creamy butter beans simmer in a garlicky fire-roasted tomato sauce with spinach and basil, then get smothered in mozzarella and parmesan until bubbly and golden.
Mashed Sweet Potatoes with Parmesan and Sage Garlic Butter (30 minutes)
These aren’t the sugary sweet potatoes you might be picturing. I mash them with crispy sage, garlic butter, and plenty of parmesan, so every bite is savory, earthy, and velvety. They’re especially good with a spoonful of the lamb gravy on top.
