I often reach for this Cajun shrimp recipe when I want a quick, easy, and flavorful dinner. Since shrimp cook quicky and there is very little vegetable prep, the whole meal comes together in just 15 minutes.
Place the shrimp in a bowl and toss with the Cajun seasoning, olive oil, salt, and chili flakes. Set aside to marinate while you prep the veggies.
1 ½ lb shrimp, 2 tablespoons Cajun seasoning, 1 tablespoon olive oil, ½ teaspoon sea salt, A pinch of chili flakes
Heat a large skillet over medium-high heat. Add the shrimp and sear for 2 minutes. Add the peppers and shallots to the pan then cook for 2 more minutes.
2 medium green bell peppers, 2 small shallots
Lower the heat to medium and push the shrimp and veggies to the side of the pan. Add the tomato paste and let it caramelize for 2-3 minutes, or until it darkens and smells sweet.

Add the stock to the pan and stir everything together, scraping the bottom to remove any stuck-on flavorful bits. Season to taste with salt and pepper.

Serving: If you'd like to serve this with rice, put on a pot before you start making the shrimp. This recipe also goes well with cauliflower rice.Shrimp: While you can make this with any size of shrimp you like, I prefer medium-sized (30/40 count) shrimp.Cajun seasoning: If the Cajun seasoning you have in your pantry is really spicy, you may want to reduce the amount.
