The Ground Beef Taco Lettuce Wraps are a quick and easy to make dinner recipe. My handsome man and my daughter usually dollop some sour cream on top, but I keep mine paleo with an extra scoop of guacamole.
These ‘tacos’ pack great for lunch. Just make sure to keep the lettuce and beef separate until you’re ready to eat. We also like them for breakfast with some scrambled eggs on top.

Shiitake Asian Salmon Skillet with Bok Choy is another family favorite. The seasoned salmon is first seared in the pan then simmered in an easy to make and richly flavored broth.
I like to serve it in a deep plate (a plate bowl!) with a spoon for the broth.
When we make this, I often cook 2 extra pieces of salmon. Then after dinner, I pack them up for lunch the next day. Since fish doesn’t reheat well, we eat it cold on a simple green salad. It’s delicious!
