Valentine's Day Cupcakes: Dark Chocolate and Cinnamon Hearts

¾ cupall-purpose flour
½ teaspoonbaking soda
3tablespoonsunsweetened cocoa powder
3tablespoonsblack cocoa powder, see notes
⅓ cupsemi-sweet chocolate, melted
½ teaspooncinnamon oil
½ cupbutter, softened
½ cupcinnamon hearts, ground in food processor
⅓ teaspooncinnamon oil
Preheat oven to 350 degrees. Line cupcake tin with paper or silicone liners.In a medium-sized bowl, whisk the flour, sugar, baking powder, baking soda, salt, and both the cocoa powders.

In a large bowl, beat the whipping cream, butter, melted chocolate, cinnamon oil, eggs, and egg white.

Whisk flour mixture into wet ingredients until just smooth.
Pour batter into prepared tins and bake for 20 minutes, or until a toothpick inserted in the middle comes out clean.
With an electric mixer, cream together butter, icing sugar, ground cinnamon hearts, and cinnamon oil.

Use a knife or a pastry bag to decorate the cupcakes. Add an extra (or many extra) cinnamon hearts on top.
Black cocoa powder is a super rich alkalized cocoa powder that is used to boost color, think Oreos. You can easily substitute regular cocoa powder for the same taste, but the cupcakes will not be as dark.
