This honey butter skillet corn is creamy, sweet, and delicious. Make it with fresh or frozen corn and enjoy it year-round. It's a quick and easy side dish the whole family will love, and it's ready in just 15 minutes!
Ingredients
2tablespoonbutter
4cupscorn, see notes
2tablespoonshoney
4tablespoonscream cheese, can be light
½ teaspoonEACH: sea salt and pepper
1tablespoonhot sauce, optional - see notes
2tablespoonsminced chives, or green onions
Instructions
Melt the butter in a large frying pan over medium-high heat. Add the corn and cook, stirring a few times, until it's hot. If there is liquid in the bottom of your pan, let it mostly evaporate before moving on to the next step.
2 tablespoon butter, 4 cups corn
Add the honey and cream cheese and stir until the cream cheese has melted. Season with salt, pepper, and if using, hot sauce. Stir in the chives.

Notes
In the summer, try making this with fresh corn cut off the cob. For the rest of the year, this is a great recipe to use frozen corn or canned corn but make sure to thaw/drain the corn first. We like to use a mild hot sauce such as Frank's in this recipe. But you can use something spicer for more kick if you'd like.
