Garlic ginger chicken is a super simple and flavorful chicken recipe. Coconut oil, ginger, and garlic coat the thighs, then they're baked until tender, juicy, and delicious.

Instructions
Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
Mix the soy sauce, melted coconut oil, garlic, and ginger in a medium-sized bowl. Add the chicken and toss so that it is well coated. If you're using skin-on chicken, use your fingers to push some of the ginger and garlic under the skin.
Place the chicken on the baking sheet and bake for 40 minutes, or until the chicken is well browned on the outside and has reached an internal temperature of 165 degrees Fahrenheit.

Can I use boneless thighs? Yes! Boneless thighs work well, but you will need to reduce the cooking time to about 20 minutes.Can I use chicken breasts? Chicken breasts tend to dry out much more quickly than thighs, so if you choose to use them in this recipe, you'll need to adjust the cooking time. You'll want to bake chicken breasts for about 18 minutes or until they reach an internal temperature of 165 degrees Fahrenheit.
