French onion rice is all about the depth of flavor, and in this recipe, I'll teach you four tips for creating irresistible layers of savory, sweet, rich, cheesy goodness. With less than ten ingredients and just 30 minutes, you can make a memorable rice dish that's sure to impress!
Heat the butter and olive oil in a large frying pan over medium heat. Add the onion and cook, stirring occasionally, until the onion is translucent, about 3 minutes. Turn the heat down to low and continue to cook until the onions are deep golden and caramelized, about 15-20 minutes. Add the garlic and cook for 1 minute more.
While the onions are cooking, start the rice. Add the basmati, chicken broth, and salt to a medium-sized pot over high heat. Bring the pot to a boil then reduce the heat to low, cover the pot, and cook for 12 minutes. Remove the pot from the heat and let it rest, covered, for 10 minutes.
2 cups basmati rice, 3 cups chicken broth, ½ teaspoon sea salt
Set a scoop of the onions aside for serving and then stir the rest into the rice. Add both the cheeses and stir again.
1 cup grated parmesan
Serve the rice with the reserved caramelized onions on top.
Notes
Stock: You can use vegetable stock if you want to make this recipe vegetarian. Serving suggestions: To complete the meal, try serving this with my Italian seasoning chicken and a spring mix salad. Serving size: I've made this a larger serving size (it serves 8) because leftovers are fantastic, and we'd really like to have extra to reheat the next day for an easy dinner.
