This beet smoothie is balanced with sweet berries and coconut milk (promise it doesn't taste like the garden the beet grew in), and is simple to make with just 4 ingredients. Swap this magenta pink smoothie for your regular green smoothie - you won't regret it!
Ingredients
1mediumbeet, diced (see notes)
1cupfrozen blueberries
½cuplight coconut milk, shake the can well before you open it to mix the cream with the milk
½cupcold water
Instructions
Place all the ingredients in a high-powered blender and blend on high for 30 seconds.
1 medium beet, 1 cup frozen blueberries, ½ cup light coconut milk, ½ cup cold water
Drink up your raw beet smoothie!
Notes
This recipe works best in a high-powered blender. If you have a regular blender, either grate your beets or use cooked beets.
