If you're craving something zesty and bold, these Cajun potatoes are your answer! They're crispy on the outside, with warm and savory Cajun flavors, and perfectly tender on the inside. This side dish could very well make an appearance at breakfast, lunch, or dinner!
Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper. Add the potatoes, olive oil, and Cajun seasoning to a large bowl and mix well.
Transfer the potatoes to the baking sheet and spread them out so that they're in a single layer and none are touching each other.
Roast the potatoes for 35-40 minutes (no need to mix them) until they are crispy on the outside and soft inside. Serve the potatoes with a little minced parsley over the top, if you'd like.
