Salt and Pepper Fish: - Center-cut cod - Cooking oil - Green onions - Garlic - Ginger - Sugar - Rice vinegar Fish Batter: - Cornstarch - Rice vinegar - Black pepper - Sea salt - Egg

Cut the cod into bite-sized pieces and dry them well with paper towels.

Mix the batter ingredients in a large bowl then add the fish and mix well.

Heat the oil in a large frying pan with high sides. When the oil is hot, shallow-fry the fish in batches until it is golden brown and cooked through, about 4 minutes per batch.

Remove the cooked fish from the pan and set it aside on a plate lined with paper towels. Drain all but 2 tablespoons of oil from the pan.
