GINGER COCONUT LENTIL SOUP

This gingery coconut lentil soup is a warm, feel-good winter soup that is as healthy as it is delicious.

Enjoy Thai-style flavors with creamy coconut milk, ginger, and garlic.

INGREDIENTS

- coconut oil - onion - ginger - red bell peppers - garlic - stock or water - beluga lentils - coconut milk - almond butter - dinosaur kale

INSTRUCTIONS

Saute the onion in coconut oil and then add the ginger, bell peppers, and garlic and cook until the peppers are soft, about 5 minutes.

Add the stock or water and lentils and simmer until the lentils are soft. 

Blend until creamy and then enjoy!
