These whole wheat peanut butter cookies are everything we love about the classic peanut butter cookie, with a twist! They're tender with a slight chew and are incredibly delicious. It's an easy recipe that kids love (and we feel better about serving), and they're ready in just 22 minutes!
Preheat your oven to 350 degrees Fahrenheit. In a medium-sized bowl, whisk the flour, cornstarch, baking soda, baking powder, and salt.
1 cup whole wheat flour, 1 tablespoon cornstarch, ½ teaspoon EACH: baking soda and baking powder, ¼ teaspoon salt
In a large bowl, cream the peanut butter, butter, brown sugar, and granulated sugar with electric beaters. Add the egg and vanilla and beat to combine.
1 cup natural peanut butter, ½ cup butter, ½ cup brown sugar, ¼ cup granulated sugar, 1 large egg, 1 teaspoon vanilla extract
Add the dry ingredients to the bowl and beat just until combined. If using, stir in the chocolate chips

Scoop the dough using a medium-sized cookie scoop and place them on a baking sheet. Press them down slightly. If you'd like, press a couple of chocolate chips into the top.
Bake the cookies for 12 minutes then remove the tray from the oven. Let the cookies cool for 5 minutes on the tray then carefully move them to a wire rack to cool completely.
