Recipe video above. This St. Patrick's Day Cheese Board had 4 homemade elements that bring the fun: brie cheese with a shamrock-shaped cut out, a green bell pepper dip bowl, dill goat cheese, and easy shamrock crackers. Fill in the spaces around with Irish cheese, charcuterie, and all the green veggies, olives, and crunchy bits you can find!
Shamrock crackers: Preheat your oven to 375 degrees Fahrenheit. Use a small, shamrock-shaped cookie cutter to cut the tortillas. Lay the cut outs in a single layer on a baking sheet, spray with olive oil, and sprinkle with salt. Bake for 6-8 minutes, until they are crispy.
4 flour tortillas, Spray oil + sea salt
Shamrock brie cheese cut out: Use a sharp knife to cut the rind off the top of the cheese. Place rind, cut side up, on a cutting board and then use a shamrock-shaped cookie cutter to cut through the center. Place the cut-out rind back on top of the brie cheese, rind side facing up. Fill the cut-out area with green jam.
1 round brie cheese, 3-4 tablespoons green-colored jam
Dill goat cheese: Place the dill on a small plate and then roll the goat cheese in it until it is completely covered.
4 ounces goat cheese, 4 tablespoons minced dill
Green pepper bowl: Carefully cut the top off a green pepper and hollow out the inside. If it doesn't sit flat, you can trim a little from the bottom but make sure not to make a hole. You can also prop it up with a a little charcuterie or something else on your cheese board. Fill the bowl with dip.
1 medium green pepper, ¾ cup dip
Assemble: I like to arrange the cheeses, green pepper bowl, and pot of gold coins on the platter first. Next, I add the charcuterie, shamrock crackers, and vegetables. Finally, I fill in the gaps with nuts, olives, and any of the green snacks.

Notes
Green jam: In the photos, I used a kiwi pineapple jam that my mom made. Jalapeño pepper jam is also very good if you like a little heat. Dip: Store-bought dip is the most convenient. In the photos, I've used spinach dip. Hummus, roasted red pepper dip, baba ganoush, or even tzatziki are all good options. Feel free to make your own dip. You'll need about ¾ cups, depending on the size of your green pepper bowl. Cheese: I used brie, Irish porter, and a double Gloucester with a green wax covering. Irish cheddar is another excellent option. I always like a mix of creamy and hard cheeses.Meats: I used spicy soppressata and pecorino salami. You can add your favorites or even omit the meat. Nuts: I used some green matcha almonds and pistachios.Everything else: When you're shopping for things to fill your board, look for green items. Browse the produce section, the chip, snack, and cracker aisle, and look around the cheeses department. You'll often find fun, local treats that will work perfectly on your St. Patrick's Day cheese board!
