These creamy sour cream and chive mashed potatoes are an easy and delicious side dish for weeknights or holiday dinners. Made with a mix of Yukon Gold and Russet potatoes, sour cream, real butter, and chives, they're a crowd-pleasing vegetarian side, and they're ready in just 20 minutes!
Ingredients
3lbpotatoes, I like a mix of Yukon Gold and Russet
Peel the potatoes and cut them into equal-sized chunks. Put the potatoes into a large pot and cover them with 1-inch of water. Boil the potatoes for 10-15 minutes (depending on the size you cut them), until they can easily be pierced with a knife. Drain the water from the pot.
3 lb potatoes
Add the sour cream, butter, and salt to the pot and let the butter melt.
1 cup sour cream, 2 tablespoons butter, 2 teaspoons sea salt
Mashed the potatoes using a potato masher then stir in the chives.
