Make brunch more beautiful with a refreshing strawberry mimosa. With fresh strawberry orange juice, honey, and sparkling wine, this cocktail is perfect for any occasion, and it's ready in 10 minutes!
2cupschopped strawberries, green tops removed
¼cuphoney, see notes
1bottle sparkling wine
Place the strawberries, orange juice, and (if using) honey into your blender and blend on high until smooth.
2 cups chopped strawberries, 1 cup orange juice, ¼ cup honey
Strain the strawberry juice through a fine-mesh sieve.
Pour about ¼ cup of the strawberry juice between champagne flutes then carefully top with sparkling wine. It will bubble up a lot so go slow!
1 bottle sparkling wine
If you know that you like sweeter drinks, add honey. If you prefer a drier cocktail, leave it out. This recipe makes 2 cups of strawberry juice which is enough to make 8 mimosas. Depending on the size of your flute glasses you may need more than one bottle of sparkling wine.If you'd like to sugar the rim of your flute glass, dip it in water and then in sugar.
