Here's a simple beet appetizer for all our last-minute entertainers. Crispy beet chips are topped with creamy goat cheese, walnuts, and arugula, then drizzled with balsamic glaze. It's easy to make, uses just 5 ingredients, and is ready in 10 minutes!
Ingredients
1bagbeet chips, see notes
¼cupgoat cheese
1tablespoonwalnuts, finely chopped
24leavesbaby arugula, or microgreens
Balsamic glaze, to drizzle
Instructions
Go through the bag of beet chips and pick out the best-looking 24 and put them onto a plate
1 bag beet chips
Top each beet chip with a small piece of goat cheese.
¼ cup goat cheese
Sprinkle a few walnuts on top of the goat cheese, top with a piece of arugula, then drizzle with balsamic vinegar. Serve right away.
We usually buy two bags of beet chips just to make sure that we're able to find enough nice-looking chips for this recipe. Make your own beet chipsWash a few small beets well then slice them as thin as possible, about 6 slices per beet. Toss beets with oil and lay in a single layer on a baking sheet. Bake at 350 degrees Fahrenheit for 10 minutes, flip beets over and bake for another 7-10 minutes. Watch beets carefully so that they don't burn. Reduce heat to 220 degrees and continue to bake until they are almost crispy, between 1 ½ - 2 hours. Remove from the oven, toss with salt, and set aside to cool.
